In regards to the high and dry, when you say top up with prosecco, how much typically is the top up? Depending on the glass used, one could end up adding too much volume of prosecco.

Hey I thought I saw a Tweet that you couldn't get a video out this week? Maybe it was someone else? So glad to see these terrific Negroni variations! This cocktail is consistently a huge favourite. I sip them all year around! Fabulous! Empress Gin is made here locally on Vancouver Island, near to me, and the distillery is outstanding to visit. Love a cold brew Negroni! I regularly make superb cold brew coffee!

I was waiting for a white Negroni, but I guess it is not Campari based. I prefer Salers over Suze and use Dolan Blanc over Lillet. One thing I like to play with when it comes to very bitter drinks is adding a drop or two of saline or a little salt. It reduces the bitterness similar to sweetness.
If you like a white Negroni, give the Tone Curve a try. It’s basically one but with bergamot liqueur with gentian infusion (the base of Suze or Salers 😉)
Thanks for providing some new ideas for using Empress gin. I keep it on hand, because it's one of the few gins my wife likes (the blue botanical seems to mute the juniper). It works well in a Bramble, but a Clover Club I made with this gin looked unattractive, and a Pink Lady looked truly revolting. Maybe it doesn't work with egg whites, because both of those drink came out gray. Anyway, it's always great to see new cocktails for Empress gin, so thanks!

@@TrufflesOnTheRocks I'm not sure about the sugar content. It's more herbaceous than Campari and I feel the Negroni's are less "syrupy". Contratto is colored with beets and hibiscus whereas Campari is artificially colored.
You are a genius .....High and Dry is a very interesting and unexpectantly satisfying cocktail. It's now in my top 20 favs. Interesting enough I had all the ingredients but had to guess- because I had a bottle of orange blossam water - how many drops is two dashes of Orange water. My research was 2 dashes is 2 1/8 teaspoons or 10 drops per dash. Was I even close? Perhaps you could advise in future vlogs. Cheers from Toronto
Hi Susan, thanks for the comment. I'm super happy you enjoyed the High & Dry. The dash is very subjective actually. While all our other measures are precise in our industry, the dash remains subject to change from bartenders to bartenders. I said a few times in my previous videos that for me a dash is about 1ml. Ten drops is a bit short but with orange blossom water, which can easily be overpowering, I think you hit the spot pretty well. Hope this helps. Cheers!
Not too sure which one is y favourite a few new to try. Love the negroni with various gins which makes for a riff? Does changing the gin make a riff? Need to explore that ;)
I wouldn't say a different gin makes a riff cause there's no specific gin mentioned in the classic recipe, just gin. But it mos definitely makes a fun experiment to try with different gins and see which one works best. Empress is a great pick btw ;)
Been wanting to try the Tone Curve since this video came out, finally got around to having all the ingredients, it didn't disappoint ! Empress is a really good gin, but the feature I like the most is the color 🙂, it can really look stunning if highlighted correctly. One thing I would enjoy whenever you make a video with a home made ingredient like the gentiane infused italicus is give some ideas of other uses, because we always have leftovers. You don't have to test them yourself, just a sentence on which classic cocktail could be interesting to try with this ingredient would be great !
That’s a great point sir! I’ll definitely keep that in mind next time. But for this one, just think of it as a “Bergamot Suze” Have you tried my Esmeralda? A smoky Mezcal Pisco soir with size and orgeat... it would work great in there I’m sure.

Great video! I just love Negronis and definitely trying these. I'm not too much of a fan of Campari so I use Contratto Bitters instead.
