Banh Mi is one of my top 5 favourite sandwiches, hands down. I like to do mine with soy/ginger marinated pork or chicken. I've never tried to make my own baguettes, but you're inspiring me to go and find some bread booster.
You are such a happy person...it makes watching your videos fun and enjoyable. I left my bread to rise and guess what? Way too long and it was so light it could have floated... Had to start over. Yeah I get the bread booster but the yeast? It's in a different language. Just wondering if it was just regular yeast? The one in the jar? I tried using Google translate but it gives me a different result each time. It looks like regular yeast but rapid rise looks like that too. I guess I could try both and see which one comes up better. But thank you so much for responding to me!
Yes, use rapid or (Quick) rise yeast in the jar or packets. You'll enjoy making this bread. It's time consuming, but every step makes sense in the finished product. The excessive kneading, water spray and humidity in oven, the oven temp. All produce that addictive outter crunch, pillowy interior and they freeze wonderfully... to reheat just 400F for 5mins

All the Banh Mi shops in my town buy their baguettes from a local baker here. They open at an ungodly hour: 4am. They’re like 25¢ each.
