I have seen thousands of videos of Japanese restaurants, street food, but in none of them I have ever seen a slice of bread. It seems that you keep the good breads for your homes and the rices for the tourists. Your oven was a pleasant surprise and the breads well risen and properly baked "drum" even the rye which is a heavy dough had risen enough. Congratulations.
