LOL I was just going to post this and then I saw your comment. One egg at a time should be cracked into a small bowl. Not many do this now days. They will learn when they have a bad egg go into what ever they are making. It is easy to crack a egg in a small dish, dumping that into the mixing bowl and then crack another egg doing it over and over until eggs are all done.

Marci, I would have mixed all my dry ingredients together,then added it to the wet ingredients. I vote with you against the chocolate chips. I crack my egg on the counter then into the measuring cup or pumpkin can one at a time( if you have ever cracked a bad egg you would know why 🤔). I make a pumpkin roll like that minus the chocolate chips plus crushed pecans in the icing. You turn the cake out on a cutting board or your counter spread the icing on then roll it up and slice it. It's great❤
Marci the thing with cracking the egg in a separate bowl isn't so much about getting a shell in it, its in case one of the eggs is bad. If you get a bad egg and cracked it into your mix you have wasted all those ingredients and have to start fresh. To answer your question about wet and dry measures is they measure slightly different and a dry measure is so that you can scrape the excess off the top of the measure evenly. Also never scoop your flour out with the dry measure, scoop with a real scoop or spoon into your dry measure. I started some vanilla last December, one with vodka and the other spiced rum, both smell Devine!
Measuring cups are MEASURING CUPS! Sheesh, you do not need to use separate for liquids or dry. (Just have a lot of them!) Eggs, yep I have always cracked them into the bowl---only put in a different bowl if had problems with any of the eggs. No chocolate chips (MILK only ) for me either, but I can understand why someone would like that in the mix. Pecan or walnuts would be my preferred choice, but that is because I love them. I do it in the bread of pumpkin and banana. Creme cheese frosting---YES!!! I also mix all the dry ingredients together, breaking lumps if they happen. BAKE like you prefer, there is no wrong way UNLESS someone does not know how to bake---CRANDALL!

You can mix your dry ingredients with flour as long as you blend them before adding to pumpkin mix. If you put your baking powder or soda in your hand first you can crush the lumps then put with your other dry ingredients. I do put chocolate chips in them also, I am a chocolate lover. 🤗💖 I learned that all dry ingredients go in a medium bowl and stir together. Cream or blend all wet ingredients in the mixer and then add the dry ingredients into wet ingredients. This helps in making sure the spices and dry is blended equally. I love watching you cook, you make it look enjoyable!🤗💖
I have a picky eater here. They want certain things in the banana bread, pumpkin bread, etc. I don't. Instead of using the correct size pan, such as a loaf pan for banana bread, I use either 2-4 X 8 or 4-3 X 5 pans, and then I put in one or two of them whatever Miss Picky likes.
I agree with you. Crandall was kind of being a jerk about it. He put the chips all over on 2/3s of the cake instead of half and half. If I were making a video for something and my husband came into it acting like a a$$hat that video would not get posted.

Don’t change Marcie. I’m 73. I cannot imagine how many eggs I’ve cracked. So many I usually crack them and open with one hand! I can count on one hand the times I’ve had to fish out eggshell. I will tell you a secret. Just put a lg piece of eggshell in next to a piece in your mix. The piece will zip right onto the lg piece.

I prefer it without chocolate chips but my husband and kids like it with them. Like I tell them, the one who does the work of baking the bread(or cake) gets to decide what goes in it! I always crack the eggs in a separate bowl just in case one is bad. Also I never crack them on the rim of the bowl. It forces the shells into the egg and can cause shells to get into the bowl. However, I have been wanting to have a recipe for cream cheese frosting so I was thrilled you provided it. My brother-in-law use to make a delicious carrot cake. I'm also not fond of carrot cake but his was so good and he always made the cream cheese frosting. I will keep your recipe and use it when I have company. Now the experiment would be for you to pour a cup of water from a liquid measuring cup into a dry measuring cup just to see the difference.

you crack the egg in a separate bowl to check the yoke to make sure a baby hasn't started to form. This is especially important for farm fresh eggs.
