So, actually you wouldn't get the same thing from bungee cords since they have less tension at the peek of your jump. The difference is so minimal it's likely unnoticeable, but we need a reason for this to exist.
I'm glad you can afford to do things your own way. It has always been a trade-off or compromise for me, but trial and error is a great way to learn what works. You are getting real value from all your effort! 👍👏

What I would try. space the motors up a little bit more so you can put those handles under your arms and hang from your armpits. move the motors up to give you clearance on your helmet.. then put a aluminum mesh as a stopper from letting your helmet pop up to high. I think it would work so good
Sadly it isn't as simple as just reducing your weight. Doing so lets you get an idea for how high you can jump but the fall downwards is not accurate. You have to have the system actually reduce your acceleration which means it needs to be able to support a large portion of your weight in order to make you actually fall slower. That said, the difference is likely small enough you wouldn't notice.
Hmm... Since you dropped mobility and attached whole thing to that three-legged contraption... Why not ditch also whole battery, motors and wiring part and use just some pulleys, wire and counterweight? 🙂
why worry about getting sliced and diced now? you've built other death machines without too much thought of being turned into hamburger. you could have used a dead man trigger on handle grip so you don't have to let go

you can test out how different gravity feels by standing on some scales and holding your weight up on the side of a bench i weigh 65kg so on the moon i would weigh about 10.8kg so i simply hold myself up until the scales read 10.8kg

This is essentially how they practiced moon landings for Apollo, just with jet engines.
I think parachute gear combined with handles would give a better sensation
