A couple of Christmases ago I got an Italian hand cranked machine, I liked the idea of the brass dies. I could never get the hand cranked extruder to work satisfactorily and it was extremely time consuming! I’m excited to get the Phillips and follow your recipe.

I do have a few question with the liquids, is your total 140 grams include the egg? If I make the pasta early do I put it in the fridge for later that evening? Can you freeze the pasta once it is done?
If you wanted to make multiple batches, could you mix in a bowl let it sit and then put it in and let it remix and extrude? I don't have this type of pasta maker but definitely interested!!

Hello! Coming over from Jess @The Farmer's Table. Really interested in making my own pasta, but don't have a way of doing my own fresh flour. How much difference is there in using store bought flour?
The angel hair is our favorite. We find the thicker shapes like penne don't turn out as well with fresh milled flour. I use Kamut. I want to try the lasagna, but I haven't yet. Thanks for the tip about resting the pasta!
I hear ya. But dollar general doesn’t sell fresh milled pasta packed with nutrients 🤷🏾♀️..It’s a small step for better health. Not to mention, I can make this pasta faster than I can get to and from the grocery store.

How do you select Extrusion only mode? i just got it during Christmas, struggling to do only Extrusion only instead of doing the whole cycle. Thanks!

The water measurement does not include egg. When I make mine early in the day, I leave mine out. You can freeze the pasta after extruding.

Yes. Replace the 50g of egg with water.

Absolutely. That is the best way to do large batches.

I have a pasta maker that has a ‘plate’ that will extrude lasagna noodles. I guess it would depend on the model.

Do you have a recommendation to replace the egg? Can it be replace with sunflower lecithin like your bread recipe?
I haven’t made this without egg. But as far as I know, you can simply leave the egg out and increase the water but I’m not sure by how much.

The angel hair is not very thin at all, it’s more like a spaghetti and hasn’t given me any issues.
