    I know I said this in the video, but I guess I have to say it again.
    **I do not eat the same thing every single day.** I know my dinner was high in carbs (I don't eat pasta every night). I know Beyond Meat is extremely processed (I don't eat every night). The MAJORITY of my diet is non processed, whole foods. It does not mean that I won't eat processed food every now and then. I'm not saying this is good or bad...it's just how I eat.

      Omg, internet people, calm down. I liked your choices today, Ashley. It was very real and honest. Who's never had pasta? Who has never had meat/substitute that is more processed? This video is what SHE eats (for one day!), not what she's telling you to eat. Eat/don't eat whatever you want people!

    I have to say I am really proud of your courage and honesty to post this because I know how people can be really judgemental but so far have not seen any negativity. I eat a lot like you but I eat beef occasionally and turkey. Did you open up the bottom of the can of beans with your new can opener? Anyhoo, I love how your apartment came out and the bedroom looks so inviting💞😌🐾🌸

    Love this one. For me growing up in a community where I was told "you're too skinny, you're eating what's not part of what we know...". Thank God my parents knew better. I lost my cousin 2 months ago. Kidney failure both of them (my fav person in the world). This was 1 thing he would not let me talk about...his diet. Considering his mum has type 2 diabetes, her heart is in such a bad condition it swells!! When i started eating healthy I was only 14 yrs old (because I knew my mum's side of the family, has diabetes, high blood pressure etc..). You can prevent these illnesses unlike type 1. I mean some family members thought I was crazy (you're just a kid they told me). But my dad said "trust me, they'll be asking you..how did you know? Shortly". I'm older than you ashley and I'm still told "you're too skinny for your age" but then they say also "you look so young, are you sure it's your real age?? You're never sick, how come??"...REALLY 😂😂😂😂

    Love that you guys have a daily routine and some of my fave videos are just “day in the life.” Hoooowwever, you guys live in NYC! I would love to see a video of your fave spots to hang in the city...brunch, dinner, drinks, outdoor spots...etc. Just places that you frequent that are unique to the city!

    I think the grass is always greener on the other side. peeps are like, "oh I wish I had problems maintaining weight". But what if you really did? I'm a curvy size 8/10 and there are days I wish I was thinner, but I also know there are plenty of ladies that wish they were MY size..... It's all about being healthy, no matter your size and comfortable in your own skin. 💜💜💜

    Ashley, make sure you get a FULL panel of thyroid testing done from a knowledgeable doctor. There could be a medical explanation if you feel concerned about your weight/lack of weight gain. I struggle with the other side of thyroid problems and slow metabolism. But, my Godmother has a very difficult time gaining weight much like you, despite adding ensure shakes and such to her daily eating.

    Wow, I just had to pause the video when you said that you've been eating plant based for 3 years.. I still remember when you decided to only eat plant based and I've been following you for a long time already. You're really the only RUclipsr I continuesly watch since then.. so you've been part of my life since 4 or 5 years now? Wooow I love you both!!

    Well I don’t always agree with what you post. But I never judge, and continue to follow you. I do have to say that this vlog has inspired me. I am going to try some of your suggestions. And Ashley, don’t worry about gaining weight. You have a great petite body. enjoy because I tell you that as soon as you have children (not sure if you want any) your body will change.

    Calories are not all the same. You eat very clean calories which is GREAT. If you ate the same calories of McDonald’s I guarantee you would gain weight but in very unhealthy way because your hormones and insulin levels would flip out. Keep doing what u are doing Ash.

    I started following you for the fashion videos but once I found out you eat plant-based I liked you even more. My husband and two kids have been vegan for over 2 years 💚💚.     I cant believe how amazing her hair is, I have been here since god they lived in that first apartment and she sank into the snow pile when they were walking in the snow lol her hair was so thin and breaking. Ugh goals my hair is falling out and never grows, gotta figure it out

    For that wall I had the same situation in my bedroom and your bedroom in your last place gave me inspiration to buy three black “door / college” mirrors from target. They were maybe 5-10 bucks each. I then hung them above my bed (spaces apart) with that heavy duty Velcro wall stuff (I am having a blackout moment here of what it’s called) to keep them flat. Get a ton of compliments! Might a good idea.

    I can’t remember where I read it but I saw something around calories consumed not being the same as the calories that your body actually takes from the food. I know when I was eating a super clean plant based diet I had to eat like 3000 calories per day and didn’t even work out that much, but more recently I’ve fallen into unhealthy habits and can’t eat nearly as much. I suppose processed foods are already kind of broken down already so easier for your body to take all/most of the calories from? Maybe worth looking into if your hormones and everything come back okay.
    I also recently ordered a book by Stacy Sims on female nutrition and exercise, look up her ted talk if you haven’t seen it already, her tag line is “women are not small men” and it’s all about the industry being focused on male research, so as a scientist and athlete she’s done her own research targeted to women and how their hormones fluctuate over the years and over the course of the month. Looks really interesting and could maybe give you some natural tips to help you out if there is something going on with your hormones.

    Keep strong. U don’t need to excuse yourself. Struggling with gaining weight is not that easy to handle. You are doing it great. Checking your body type throw a professional mean that you are concious about your body and you try to find the best solutions.

    Hi Ashley. I have also been plant based for two years. Have you ever had your blood tested? I recently had mine done. Everything was right on track except my wbc was low. I feel great but my doctor wants me to go and get the test done again due to the low wbc reading. I have read that a lower wbc is not unusual for a plant based eater.

    I’m also a slim gal and constantly have to “prove” that yes, I do eat. Although my husband quite happily tells people I eat more than him. I also love my healthy fats and carbs and eat waaaay more than what you’ve had in this video. Calories aren’t all the same though (quoting from your comment in video). Calories from healthy whole foods create mental and physical health, whereas heavily processed foods detracts from good health (and leads to weight gain). A lot of science behind all of this- plenty of research papers explains this well. Another reason to choose healthy foods. Not just for weight (gain or loss), but for long-term health :)

    I am vegetarian. I do eat cheese and i love milk..
    I love the beyond meat burgers and the chicken from gardenia (may have spelled that wrong)
    But i did not know about the bbq beyond meat or the italian sausage THANKYOU!!!!😁

    From personal experience: i was vegan for 7 years, was really skinny and my body was not able to hold on to muscle. Once i started eating meat, i gained muscle and also started feeling so much better with energy

      @@ashbrooke Every body is different. Also, fyi, those fake meats, tofu and soy, including soy milk, are not That healthy
      I am a breast cancer survivor so just an fyi. I know you don't eat them everyday but try to get your protein from beans then, like lentils and black beans, not in cans, the ones you boil. I am mostly plant based but do eat some animal protein at least 3 times a week. Good luck xoxo

    I had the exact same rash when I was using a strong Retinol and added L-asorbic Acid (Vitamin C) to my routine. When I stopped the Vitamin C it healed up. Hope this helps :)

    For a good plant based protein powder, you should def try the brand Tropeaka, it’s my absolute favorite, I’ve been using it for over 2 years. Clean ingredients and the best tasting protein powder I’ve ever tried. It’s Australian based so the shipping is a little pricey but it’s so worth it.

    I would get your metabolic rate tested too. They places that do body analyzers usually do this too. You have to breathe in this tube for 30 mins or something, but the info is really helpful. This and tracking your food can help you find your maintenance calories so you can then estimate a what a mild surplus would be.

    It's definitely not because you don't eat meat and diary. Both my daughters eat those (and lots of it!) and they still weight under 105 pounds. Granted, they are 16 and 19, so their metabolic rate is still high, but that's not the only reason. Very interesting what the woman said about having your hormones checked, these can influence weigh on both sides of the spectrum. Somehow I didn't think of asking their doctor about it. It's a great idea.

    Basically you eat carbs and beyond meat is all GMO soy meat. You need nutrient dense foods.

    I struggle to gain weight aswell. I have PCOS and that is the reason why (because women with PCOS are insuline resistent). A few weeks ago I learned through a girl on instagram that a low carb diet can reduce PCOS symptoms and will help me build muscle mass earlier.. (instagram dorinefitt)

    Love this video! Just want to say (in hopefully a helpful and not critical way) that the concept of needing so much protein is a largely a myth. According to Dr. Michael Greger, “research shows that on average, vegetarians and vegans get 70% more protein than they need every day. Surprising that there’s so much fuss about protein in this country when less than 3% of adults don’t make the cut- presumably folks on extreme calorie-restricted diets who just aren’t eating enough food, period. But 97% of Americans get enough protein. There is a nutrient, though, for which 97% of Americans are deficient. Now, that’s a problem nutrient. That’s something we really have to work on.     Well don’t go to your regular internist MD for hormones; I’d seek a functional medicine or naturopathic physician & conduct a DUTCH hormone test which is amazing top notch. Watch RUclips video about it for more info.) And if you must stick to MD..go to an endocrinologist because regular internist/family med docs DO NOT test hormones properly.

    Not too sure about vegan, a lot of well informed vegans i know seem to have very tired looking eyes & a dullness about them.

      Chelsi Carter it’s definitely harder but can be done right. I was a very healthy vegan for years but recently came off the wagon as my mental health was not in a good place and I was struggling to do all of the prep and making sure I had all my nutrients covered. I feel like your health declines faster on a poor vegan diet as it’s so easy to do it wrong, currently veggie and transitioning back to vegan.

      I agree and I’m with you on this.
      There are so many uneducated people out there when it comes to being plant based. They think everything they hear is true (example: tired looking eyes and fullness. Lol)

    Your meals look yummy! Being vegan seems exhausting to me. Idk how you do it. As a mom of 3 i can’t imagine trying to make sure everyone had all their protein and nutrients without eating meat. I know people do it, but it just seems exhausting. Btw I have had the issue my whole life with gaining weight and people calling me too skinny. Then I had kids and am not like that. So it could very well be hormones.

    Eating salad won't help gain weight, but grains do. Like lentils peas beans...etc so try eating, more of that. Also i don't recommend eating anything sweet before a meal because it may make you lose your appetite. I'm sorry i know this isn't about getting advice from people. But i also struggled with gaining weight, fast metabolism. So my mom would always make me eat grains and nuts.

      I added grains to the salad. It was about half lettuce/half grains

      But if you don’t eat above maintenance level you won’t gain weight. And with all your very healthy choices you won’t gain fat that easy anyway, the combo fat and sugars make you gain weight faster f.e. I can understand that you only want to eat healthy but that is a main reason of not gaining weight imo. Especially since your portions of pasta etc are small.

      Ashley Brooke but the fats are not combined with sugars. It’s the combo that makes it easier to gain fat. 😉
