I used to inspect plants for a living from a job I’m retired from with commercial pest control. We had to service plants like that twice a month and it is very detailed and time consuming. Part of our job was to write a sanitation report which a copy is kept for in-house inspectors to read and well as any government inspectors. A very detailed log book had to be kept. It is mind boggling to read that they had 69 violations. Usually 2 and no more than 3 will cause a big fire drill for everyone involved. Some of those reports list conditions that took some time to become so unsanitary and it didn’t happen overnight, some are outright gross! Clearly the people who run Boars Head had a corporate culture among themselves where sanitation conditions didn’t matter.

Sometimes you get bad apples in management and production quotas become more important than visible problems. I never worked for Boar's Head but have been in companies where I highlighted issues and was told to mind my business and worry only about my immediate job. In this work environment, quota numbers become more important than quality.

Most people either have no idea about the nasty conditions in most food production outfits or choose to adopt the "out of sight, out of mind" attitude and eat all kinds of gross and very unhealthy stuff. When I worked at General Mills the USDA, and FDA would come in around once a year to check the scrambles department and they maybe spent an hour or 2 on the floor if that... we knew in advance when inspections were gonna happen and we were told to keep our areas clean. Processed food plants are nasty, I mean absolutely nasty. We used to go 2 weeks in-between sanitation (cleaning the lines) during busy season and it was down right disgusting. I no longer support GM due to their treatment of me, and any chance I get I will spill the beans on what I saw there within the plant. I'd rather go eat food made in a food trough on a farm before eating anything from General Mills...
Edit: For clarity, I was a full-time employee in the plant and most of the "quality" checks just got pencil whipped to save time

I used to haul meat to various meat packing plants and they all had on site USDA inspections and what I can tell you is the whole USDA inspected label is a joke.heres the deal, the inspector is assigned to a plant and has an office and everything there.they go to work there every day and do their 9to5 thing and go home with a decent paycheck and government benefits and it's all good.if they see a bunch of violations like we see here AND REPORT THEM guess what? the plant gets shut down, sometimes permanently, and they're reassigned to the nearest plant that needs an inspector which sometimes means packing up and moving to another state or something.or just find another type of job in that area, most likely not as cushy as their USDA inspector job was so guess what? THEY DON'T REPORT THE VIOLATIONS so it'll be business as usual and they can continue to go to work each day and do their 9to5.its not in their best interest to upset the apple cart if you know what I mean.theyll reject a load of meat if its bad to prevent an outbreak or something and make it look like they're doing something, but to make a fuss about stuff like rats and roaches aint happening.if you're a lab tech working at the only lab within 500 miles you're not gonna do something to get it shut down same with the inspectors.

We had a huge USDA Office on the main floor and they would take swabs to test each morning after we cleaned. We were always nervous we might fail a test and did not hold back in our efforts to make sure that did not happen. My mother worked in a local meat processing plant and that was the same. If hot water from the coffee maker spilled on a stainless table the line was shut down. When did this stop?! I always assumed that was the standard and always would be!

    • @steveblankenship5474

@@deerhunter7482 I used to inspect plants for a living as a third party vendor. We had to do this twice a month and it is very detailed and time consuming. Companies have their own inspectors and everything goes into a big log book which USDA inspectors go through. With us sanitation reports go to management directly. Way too many people knew about what was going on and the ultimate responsibility were the company owners.

first off on fully disgusted. How the hell can they get away with this if they’re supposed to be a health inspection. This tells me one thing that the plant, and the inspector are in each other’s pockets. Somebody’s getting a big kickback because this would not be loud if it weren’t so. I’ve managed bakeries, deli, fast food. And if any other restaurants that I managed were found several things we would’ve been shut down. Why was that not happening here here? This is what really the important thing. Do United States government no longer cares about our food supply this is why everything so freaking expensive, and people can’t afford anymore. This is also why I’ll make my own boneless skinless turkey breast, and flying on my meat slicer, as well as other luncheon meats. I won’t buy them.

Boars head is owned and operated by an Italian mafia family. They used to run gambling in new York in the 60s moved to the trash business in the 70s and started controlling boars head operations in the 80s. New York delis that didn’t sell boars head meat started having set of unfortunate events happening to those businesses. It’s how they got so big.
