I couldn't find low-sodium beef broth so I used chicken . It was really good

You need to add some Smell O" Vision or Scratch N' Smell attachments to your video. Bet it smells and tastes great. ;-)

Instead of draining the grease & then adding in butter, couldn't you use the grease to make the rue?
Sure you could but it's a cholesterol thing for some folks.
I prefer to use the butter over the fat from the beef. ;)
