Yhwach (Quincy King) didn’t need to learn how to steal Yamamoto’s bankai from looking at him using it. That was just Yamamoto’s assumption since no one else was strong/powerful enough to steal and handle it. Only the Quincy king was powerful enough to steal it even at the start, he was just only going to meet with Aizen but had someone to just take his place.
Royd Lloyd And Loyd Lloyd are "Twins", Both have the power to transform himself into the exact physical likeness of another person, but Royd Lloyd also "replicate the memories and personality of this individual", in another way Loyd Loyd also "replicate the spiritual power and abilities of this individual".
In the Manga we see them the first time hidden in the official arc poster and this poster also appears in the opening, so it was planned from the beginning that it was not Yhwach who would fight with Yamamoto, (In the manga there are also extra panels where they show the past of the twins and explain their powers).

In the magna it's explained that yama has killed trillions of people in his lifetime, so he zanka no tachi south gives him trillions of undead soldiers to command.
Also, in the manga yama explains they didn't understand Ichigo's bankai because it is still developing and even ichigo himself doesn't truly understand it.
Many paid attention to the animation in this episode, but the best part for me was the character breakdown of Yama and how well Ywach uses mental tactics to win instead of sheer power. Ywach had Yama's squad and lieutenant killed first, this ultimately turned Yama into a rage monster fighting for revenge
- Here Yama is being completely spiteful, so instead of treating Ywach like a true threat and just erasing him, he tries to belittle, demean and torture him. In doing so, Yama isn't fighting like an experienced Commander which leads to him making the mistake of overusing his energy, which is why it was weak enough for Ywach to steal.

@@LifeisANovel Wtf are even watching if you don't like it? Yhwach fought Yama before and has been planning for this moment for decades. It's the same tactic Aizen used when he fought Toshiro and the other captains. There is no inconsistency here you're just a hater with nothing better to do.

They cluld always steal his bankai even without knowing what it did, but Yhwach ordered Royd not to because only Yhwach himself could control it.
Basically the minute Yhwach stepped foot into SS Yamamoto was dead.
For stealing a bankai, you need to understand it and have enough power to use it. Ichigo still has a young zanpakuto and hasn't fully realized it. Think about all the hollow he had to incorporate into his bankai after learning fullbring and there may be more to master.
You dont need to know about bankai that was just Yammamoto's assumption, you only need to match power with it.

Understanding the bankai DOES NOT have anything to do with being able to steal it.
Even if you didn´t read the manga Juha says it in this episode.
Yama assumed wrong.
The fact that letters were casually stealing bankais left and right throughout the soul society and also waited for yamamoto to be provoked into using all his tricks and weakening himself proves that the understanding could also be a factor. Two people tried multiple times to take ichigos and failed. I don't thing it is a stretch to consider knowing the full abilities to be needed, especially since they would need to know to use it.

@johanmelis12 it has been years since I read it so you could be right. If it says so, then ok. Until then, I have my preferred theories on it like for other series.
