- Baigan choka is a quintessential Guyanese/Trini breakfast food, especially when served with oil roti. I hope you enjoy my version of this delicious dish!
Ingredients and Measurements:
3 small eggplants (baigan/balanjay)
8-10 cloves garlic
3-4 hot peppers (or to your taste)
2 small tomatoes
1 small onion thinly sliced
2 scallions sliced
3-4 tbsp. oil (to chunkay)
salt to taste

Thank you for this detailed, beautifully presented video. I will be attempting to make this in the next week or two. I remember assisting my mom with this when I was younger. unfortunately she died while i was still a teenager and I never learned all the tasty Guyanese recipes. Hi, I enjoyed this video very much. I grew up watching my grandmother and Dad doing this the real old fashion way on a dirt stove in Trinidad . This is the first time I saw it done with tomatoes, which I am anxious to try out . I just made this for breakfast with fry ochroes on the side . ABSOLUTELY FANTASTIC VIDEO . 👍👍👍👍❤

Looks good 👍 but I don't have a BBQ so what temperature and for how long do I cook the bygan in rhe oven and do I wrap the began in yin foil ? Thks !!
You can wrap in foil and put in the oven at 350 for about 30 minutes or more. Poke it every once in a while to wait for it to soften

What kinds of meat go well with this. I don't eat beef and pork, so what other options are there. This was Sunday afternoon mean from my mom. Didn't like it as a kid but as I got older I liked it more.
You can pair it with chicken curry or even lamb/goat curry. A shrimp curry would also be good.

One that is firm and heavy
