I miss my Guyanese food. I visited my mom in Queens recently after 1.5 years, and she made some soup, chicken curry, cookup rice, and some other dishes for me - I was in heaven! I try to cook a few things here and there, but they never taste like mom's cooking.

Candy, when buying eggplants look at the bottom. If the bottom white part is round and has a slight indebted it is a male eggplants. They have less seeds and not as bitter. The female are usually elongated. They usually have more seed and a little more bitter

Looks yummy,perfect with big chrimp.on the side.In my younger years a neibour of ours use to make it axactly this way with jumbo schrimp on the side,I never forgot the way she way she made bulange chokha,one of the yummi dish of my childhood i never forgot and my mother use to go by their house and eat some,for as far as i can remember my mothers favorit dish for how nice they made it to be a special dish...

Hi dear. Liquid smoke should be available in your local grocery store or check Amazon. I have no idea how to tell the age of the eggplant to he honest just chose the small looking ones I guess.

Also I did explain why I was doing the roti Like this. Because I'm not good at clapping so I find other ways to loosen the layers of the roti without having to clap it. I'm speaking English with a guyanese accent, so that the entire world can understand what I'm conveying. If that don't seem true to myself for you, it's not my problem. You want raw creole guyanese accent, you won't get that here since I have international viewers that I cater to aswell, not just guyanese. There are many other channels that speak the language you prefer, I suggest you go spend you time over there.
