Bighunter thank you. Good luck you should come out with great wings. Make sure you dry them really good with paper towels first. Let me know how they turn out.
Hello Bighunter, heavy smoke will make chicken skin rubbery. You got to get chicken to temp & pull them. I always brine my chicken but it's also important to have the skin as dry as possible. The baking powder is a key ingredient for that.
I have a pitboss pro series 2 vertical smoker. Brand new to smoking meats. Since going from 250 to 425 can take a bit, do I count the time for the smoker to heat up to 425 in the 25 minutes? Or crank it to 425 and start the 25 minutes once it hits temp?
Out of all the methods I’ve tried, the 250 for 45 minutes,425 for 20-25 minutes you suggest really has worked the best.
I love the back toss of the spoon into the sink. Going to try these, thanks!
This was the first chicken wing video watch while preparing to do the same and now I watch it every time I make wings. Enjoyed it!

Baking powder for crispy skin. Can’t emphasize that enough. Works great
When you fry yes. But even then it leaves a chemical taste. Does it work for smoking?
use aluminum free
Corn starch works better imo
