      The purpose of using day old rice is because NEED DRY RICE FOR FRIED RICE.
      But not too dried.
      So that means, you dont always need to use leftover rice. But that's an easy way.
      You can still use fresh, soft rice. BUT you need to treat them differently. The point is, need to have dry rice.

      The origin of that dish probably about how to reuse the leftover rice to make a delicious freshly made meal.
      And remember. Back then, people dont have rice cooker😅. They all cook rice either in normal pot or.. a special pot that has different names in each region. China, Japan, indonesia, Philippines, India, all call it differently.
      And after they cook the rice, they move the rice to a container thing. Made by wood or bamboo.
      Like in the famous bamboo steamer
      And obviously that container cant warm the rice. So over time, the rice will get cold and dry. It's not delicious anymore if it's dried. Hard to chew

      I actually think that's not a Teflon pan - the hexagon pattern is a giveaway because I've seen a lot of other RUclipsrs advertising these pans which are non stick but a different material. Notice how he is using a metal spoon? That damages normal non-stick, but these ones are different, and they market them as being more professional level. Don't know the brand name so I could be wrong tho

    Highly recommend not heating a nonstock (that includes Hexclad) to smoking - the Teflon coating degrades and can release hydrofluoric acid into the air which is a potent and deadly poison. Ceramic pans don't release this, but the don't survive the heat either.

    Pro tip: Use a slotted spoon and fry all your ingredients one by one in a smoking pan then set them aside on the plate. That way, you can get wok hei on all your ingredients on even the weakest stove...

      @@felixiswara So, what exactly is the difference between a regular nonstick coated pan and a hexclad pan where the nonstick coating is separated by "steel hexagons peaks"? It still has the same plastic coating which comes off over time due to material expansion when heated and ends up in the food.

    Found this short at the perfect time. I had almost nothing in my fridge with which to make the fried rice(the tofu went bad and I didn’t realize I was out of carrots) but I did use more oil than I usually do and it was like night and day!!

    guys don't heat your pan up like that if you are using coated pans that will absolutely wear your coating off. also teflon release toxic fumes when heated up above 500 F which is the kind of pan used in this video

      I was looking at that pan, too! You can't heat non-stick pans up to 500 degrees. The hell with the wear on the coating (already abused with the metal utensils, anyway), the peas released into the air is not good at all. It'll kill any birds in the house, too.

    You can use fresh steamed rice too just add a bit more oil when you fry the rice. The reason you use day old rice is they are dryer while freshly steamed rice has more moisture making them clump together. The oil will make the freshly steamed rice not clump together.

    I would suggest NEVER pre-heat your non-stick pan empty to the point where it smokes. The harmful coating can be damaged and cause serious health issues in the long run.

    When your oil is that hot be really careful that there is no exess water at the bottom of the bowl when adding your rice. It can vaporise and ignite the oli.

    IMPORTANT! DO NOT heat a nonstick pan until its smoking, they contain PTFE which releases toxic fumes when heated up to high temps. Hexclad pans are also made from PTFE. I thought he'd know this as a pro chef tbh

      @@some_guy_2323 Us asians don't know any better as teflon was more of a western thing originally since they don't use smoking point temperatures to cook their food. So Asian me growing up in the west never knew and ended up inhaling a lot of those fumes throughout my life, not life threatening, but definitely has negatively affected my health and worsened IBS. It's not like CI woks take much maintenance esp if you stir fry regularly, and SS is by far better for pots than non stick.

    One day old cold rice really is a game changer..and im huge on seasoning so need to hit it with a little soy sauce...then a little bit of chicken powder bouillon and some garlic...man it changes the game

      Or, boil your rice for 5 minutes in plenty water with chicken powder and then drain. After that let it stand covered with a lid to steam in the residual heat fir 15 min When done, place on a backing tray and let it cool complete. Last, reheat in the rice before adding it to the pan so you do not loose too much heat

      The rice he used already looks very dry which is why he used freshly cooked rice instead of day old rice. This is I assume to combat the low heat output of western stove tops and the reason he exaggerated that you’re “losing heat” just by flipping it. Day old rice is almost a given in most situations but people don’t usually have a wok lying around in their house. Which brings the point that people who do follow this “rule” of fried rice don’t end up even making it properly anyway because of it. Funny thing about rice is that there’s so much placebo in adding or doing steps differently when in reality, the highest quality and promise to authenticity (for Chinese) lies in simple and quality Ingredients because that’s what gives good flavor, not seasoning.

      Fresh rice totally works as he shows in this video, but I think there are two things that cause people to have trouble with it for fried rice: not rinsing the rice enough before cooking, or cooking it with too much water. Both will make it stickier and therefore harder to fry. That said, I often do use leftover rice mainly because it’s a great way to make use of leftover rice. But I warm it in the microwave first, for the same reason he remarks in this video that you want to avoid cooling down the pan too much.

      Great tips everybody. One thing I always do is wash my rice like crazy. When boiling my rice I don't use the same exact water to rice ratio that I normally do when I make for other dishes (like chicken gravy and rice or rice to go with gumbo)...I have always found cold rice to be easier to work with...I will say our stoves here in the states (I have an electric stove) won't achieve that extremely high heat point you find at the restaurant that uses actually fire but I can't lie...my homemade fried rice (and lo mein and Mongolian beef) can give the restaurants a run for the money..besides it also matters how you velvet your meat..yummm

    Why is it so hard for people to call it spring onion?

      Cause there’s a difference. Scallions and green onions are the same. Long and thin and don’t have a bulb on the end. Spring onions are literally just onions harvested young. They are two different species of plants.

    "hot fresh steamed rice. Why? You don't want to lower the temperature of the pan anymore."
    "look at that, look how much heat we've already lost"
    "spread it out even, so all the surface area can get heat."
    and so his secret ingredient (yum yum aside) is HEAT.

    Pretty sure those non stick coatings break down and become carcinogenic after very high heats are used. Its breaks it down and it begins failing. Why most chefs use plain old stainless steel for hi heat uses

    I had a good gas burner and a great wok at my last place, but I hated using it with my very curious young kids nearby. I have an induction hob now and couldn't be happier. It's so much more pleasant to use. No worries about it losing heat too fast either.
