I’m a chicken rice fan. And I’ve tried chicken rice all over singapore. These are some underrated ones which I really think are better than the popular ones, and their chicken broth are good too. 1) Farasha at Seah Im Food Centre (try the black pepper nasi ayam, not the ayam penyet). 2) Chicken rice at 744 yishun street 72. 3) Uncle Louis Chicken Rice at 19A Dover Crescent.
The reason why the chicken rice at Hua Kee at Redhill is tender and juicy is because they dunked it in ice cold water. This process is done to stop the chicken from cooking further even though it has been removed from the fire. This not a traditional Hainanese cooking method but was later discovered by chicken rice chefs. Also, dunking chicken into ice water was only done to white chicken and not to roasted chicken. Another thing to note is that "roasted" chicken is actually deep fried chicken. Lastly, the sauce drizzled over the chicken is not hoisin sauce but a mix of soya sauce, chicken broth, sesame oil and sugar.
Thanks for the effort and time taken to try all the chicken rice. Good eye opener as I have only tried 925 Yishun Chicken Rice from your list. Will go and try Hua Kee as I have been to this market frequently but never tried this chicken rice before.
It has been years since I had the chicken rice at katong and it looked just like what I had from before. Good to know it is still tasty and that you've also found this little gem!

For your information, real (authentic) Hainanese Chicken Rice has the chicken boiled (not roasted or deep-fried) till cooked and then immersed in iced water (preferably with ice in the water) till cold before serving, it is dripped with light soya sauce and sesame oil. The dipping sauce is actually grounded ginger sauce and top grade dark soya sauce (slightly sweet). Chilli sauce is made from grounded chilli, ginger, garlic and lime/calamansi.
I learned a lot from doing this! So great to learn more about how this classic dish is supposed to be served and the variety that is involved. Originally I thought it was always plain white chicken on plain white rice...I was pleased to learn how wrong I was! So great to see different takes on a classic formula!
Hi, now you should try prawn noodle soup. Its another Singaporean favourite. My preference will be in the east , at East Coast Road. Its called Beach Road Prawn Noodle House.

Yes, would be fun to do this with another food. My main challenge is time. This video took me about 2 weeks to film and was about 2 hours per stop. I ended up putting about 16 hours into this video between filming and editing where as a typical video for me is about 5-6 hours. I need to find that time somewhere....
A real adventure in Yishun! I think I had this dish many years ago in the area too. Looking for exciting Hawker food has been a favorite past time for me too!
Katong Shopping Center is one of the OG chicken rice spots..you should also try the free achar or vegatables pickles...i grew up eating this..good choice!!!

This old rustic shopping centre but that chix rice is superb! Hope you tried the carrot cake stall too! How come you alone? No regrets! One of the best chix rice stall in spore!
over at the original 925 Yishun chicken rice, they only serve white steamed chicken.. There is no roasted chicken option... If you are looking for cold chicken rice, u can try ming kee chicken rice at Bishan ( Personally its too cold for my liking but its rather famous in Bishan area)
925 Yishun was very tasty! I usually prefer roasted chicken, which is why I chose it if it was an option. Looking back maybe I should have done all white steamed to be consistent.
I used to tell people that most chicken rice is good. Even those unknown ones that you get from random stalls near your home. Good luck in your search for good food in Singapore.
Treat the soup as a chaser and not soup per se. Kampong chicken is free range. By the way, you need the spoon to scoop rice not chopsticks or fork. Only in Singapore where chickens will not survive past their first birthday.
Glad that you mentioned his use of the fork. I was strangely bothered by it. Hahaha. Especially on the second stall when bits of the chicken kept falling off his fork. I was like: why not just use the spoon, then bits won’t keep falling off.
Maybe you and Heather can cook your own chicken rice. Your way, your style. Ingredients such as Prima ready-to-cook chicken rice paste or soy sauce can easily be found at any neighborhood supermarket. The only hard thing to prepare is the chilli sauce. How’s that idea for your next video?

Chicken is supposed to be eaten cold. Traditionally the chicken is steamed and white, not roasted. Try the few chicken rice stalls along Purvis Street. Cheers!

I prefer steam(white) chicken than roasted chicken.
