Thought you'd be interested to hear that they don't buy pistachio cream but instead roast raw pistachio nuts then grind them up to the consistency of peanut butter. To that, they add melted white chocolate before blending it with the kataifi. They didn't use tahini at all. The melted white chocolate acted as the thinning agent for the ground pistachios which seems a more suitable item then the more savory tahini.

Freezing them helps to trap in moisture and when you defrost them, it redistributes so you end up with a cake that's evenly moist. You're also aging the baked good, which intensifies and improves the flavor. I'm a hobby baker and I always try to chill or freeze my cakes ahead of time to improve the texture and flavor.
i just made this recipe and it's soooooooo good! Super fluffy and moist. Next time i'd just half the amount of salt and cut down on like a third of the sugar but that's just my personal taste. Thank you for the recipe!!!
The Circle K near my house has a Chocolate Muffin similar to this one. They are real good. My wife and I split one with a scoop of vanilla ice cream for a little dessert once or twice a week.

Oh wow, thanks for this video. I hadn't heard of this, and I will be making them next weekend. Update: Made these last weekend and they are the best cake I've ever tasted. The hardest part was making and cutting out the cupcake molds, I will be buying 6x6 parchment to make these again.
These cupcake-muffins look amazingly good! I will try and share with my colleagues. I bet the athletes would have cried if someone made them these chocolate heavenlies. I heard they didn't get very good food, no a/c and terrible sleeping conditions. The cupcake-muffins would have been better than gold. I give Mrs. Emmy 10 out of 10 on her baking skills today. Fun story: my Dad started a muffin shop in Germany about 20 years ago. He imported flour from Canada, because he just couldn’t make muffins ‘right’ with European flour.

Emily, i tried this, and it was a hit. Thank you so much. Sour cream is expensive here in ph so i substituted it with all purpose cream + vinegar. Also i was skeptical with 2 tsp salt, so i just added half tsp hehe. The freezing method is a wonderful idea. It makes it moist and more chocolaty. I made 11 pcs big muffins in total.

I don't know what software you use, but there should be an option to force the audio to go to both the left and right channels in post if your audio keeps only recording to one side! It's just a temporary fix until you figure out your new equipment! Hope that helps! Love your videos and I've been dying to try these muffins since I saw that athlete making memes about them! ♥

Funny view from France, the country that produces and creates the greatest varieties and best artisanal pastries in the world, whether it's an industrially manufactured French pastry that is so successful. ^^ For information these muffins are sold in France in university school canteens, but fortunately for students in France at a much lower price. 😅 Well after, I have not tasted it, but a friend volunteer at PARIS 2024 yes, and she confirmed to me that they are delicious! 🤤
I found that when I freeze my Costco muffins, they always taste better. It’s like next day lasagna and leftover Chinese food. I don’t know why, but some leftovers always taste better the next day. Fried old chicken and leftover cold pizza. Yum, yum

I tried following the recipe on your website and had to switch to the today show one since that three me off and I needed to make sure that the rest is accurate as the ingredients are not inexpensive.

I don’t know about the USA, but here in Kuwait, McDonald’s triple chocolate muffin looks almost the same (minus the topped chocolate sauce). It’s SO delicious, rich and chocolatey and has a gooey chocolate cream center. I think it’s so underrated or ppl hasn’t discovered it yet (just coz it’s a McDonald’s muffin)!
I want to try these so bad! Maybe I will try to make them eventually. Kind of reminds me of my favorite muffins at a local shop near me that chocolate muffins with zucchini!! It's super moist because of the zucchini, but they also put tons of chunks in it. I have been trying to crack that recipe since I first tried them!
Much as I love chocolate, I've a hard time eating muffins due to the sheer amount of sugar; carb crashing makes me nauseous. Hubby bought me a Dunkin D blueberry muffin yesterday, and I ate less than half- still felt sick afterwards. I may make these for hubby though, he loves sweets!
I wonder if the freezer dehydrates them slightly making it more concentrated. Possible that the flavours have more time to saturate as well. Many bakeries let their cookie doughs sit for a day or two before baking to let the flour fully hydrate, (much like the famous Overly accidentally-vegan choc chip cookie recipe) I was told it was a trade secret.

The fridge dries out baked goods. The freezer is definitely our friend when it comes to cakes, muffins, and breads. The freezing process evenly distributes moisture.
Not sure what's going on with the audio for your videos---I know some people say it sounds fine for them, but I'm looking at the meters on my interface and at the beginning of the video there is audio in both channels (L & R) however once it's on just you, audio is only coming out of the left channel. And this has happened with the last couple of videos of yours I've watched.
