Your mom’s version of Filipino foods are better than the real Filipino cooking
In cooking, version means different way of preparing or cooking the dish using the same ingredients. Otherwise adding different ingredients is called fusion ( like how filipinos take the italian spaghetti and fused it with pinoy love for sweet taste and added banana ketchup or sugar thus a new dish called pinoy sweet style spaghetti was created ) or adding a different ingredient makes a new different dish ( just like what happened with caldereta, mechado and afritada) so tell me just when did a "version" becomes better than the original?

That adobo is so delicious because it has more onion and garlic tomato also adds as a flavoring agent to balance the sweetness of sprite your mother really has a touch in cooking GODBLESS TO YOU AND THE FAMILY TAKE CARE ALWAYS
But we dont put tomato in our native adobo,but for Mama Olga its her own recipe ,so it taste good and masarap,,❤😊❤😊love this family
Adobo is different to Afritida. Afritada, menudo, mechado, kaldereta are almost the same but have some different in ingredients. But these 4 dishes are using tomato sauce.

Actually it looks like she cooked mechado and not adobo already 😂 adding different ingredients makes a different dish just like what happens with calderetta, mechado and afritada or if the dish somewhat retains it's original taste after adding different ingredients it's called fusion.

I wonder why you didn't put vinegar and bay leaf in your adobo? This makes a difference. And lots of garlic and whole peppercorn.
