Spanish has stem-change verbs because it makes diphthongs from Latin words with a stressed "e" or stressed "o" by taking the weak vowel related to the "e" or "o" ("i" or "u" respectively) as a replacement for either strong vowel and adding an "e" after the weak vowel (e.g., ciento from centum and bueno from bonus), but Spanish only does that when the syllable is stressed for the word in that language as well. Since the stem isn't stressed or meant to be outstanding for the nosotros/as or vosotros/as forms of the present indicative tense of a stem-change verb, the stem doesn't change for those forms of the verb. A stem for a stem-change verb only changes if the stem is stressed or still has to be outstanding when it's not stressed.

A lot of the verbs that end in IR are e = i. There are a few that are e=ie, like preferir, referir, sentir... but a good majority of them are e=i! That was helpful for me to remember which ones!
Great question Kookii, just by looking at the verbs, you can't tell. Native speakers acquire that knowledge through trial and error. As a second language learner, trial and error will definitely play a huge part too, but you can also get some lists with stem-changing verbs and practice.

You know, just like in English you have people saying "summer" and sound the "r" and others say it like "summa", no "r" at all, in Spanish "y" and "ll" have 3 different pronunciations: 1) like the J in "John". 2) Like EE in "feel" 3) Like "sh" in "sheep" They are all fine, and every Spanish speaker will understand you no matter which one you choose. Because it’s based on a verb (likely in Latin) that has an “o” in the stem. The Portuguese word “jogar” has the same idea (as in regarding etymology, not conjugation).
I feel your pain! I really do! But let me tell you that it may seem way too complicated at first, but once you get the logic of how it works, it gets easier and easier.

Hi, there's no way to tell them apart unless you've seen them first. It's something very arbitrary.
A lot of the verbs that end in IR are e = i. There are a few that are e=ie, like preferir, referir, sentir... but a good majority of them are e=i! That was helpful for me to remember which ones!
