The fort restrict your movement possibilities making your troops "cluster" : prime target. Units on walls will also take a Huge loss when the wall comes tumbling down. On the other hand, 2 unit of cavalry of any sort is enough to incapacitate atleast 1 unit of cannon of any sort, along with giving you valuable time. It's all a matter of how desperate the situation is and how far you can stretch your forces.
That's actually a very good strategy, but you're gonna have to focus on your cavalry and be aggressive, you cannot hesitate for one second if not you'll get swarmed
But it also depends, if you actually starve the enemy out before attacking it's an already weakened garrison: focus your artillery on the cav (which I tend to do after destroying towers, but would obviously do in reverse if I saw them attempting a sally out) and then you would rout them. Also I usually try to attack towns that are so lightly defended that I can auto battle, conquer and then wait for the enemy's army to try and siege me instead, where I almost always win, or have open battles where depending on the terrain and numbers you can again win with ease even on harder difficulties if you place your troops well. As for defensive sieges, I always play them even when the odds are overwhelmingly against me to bleed the enemy the most I possibly can. Sometimes I even get the surprising Heroic Victories that I never expect because the AI SUCKS at offensive sieges

In Shogun 2 Fall of the Samurai the artillery (forgetting the Wooden cannons) are actually good... It's in the regular Shogun 2 where they're not worth the effort, they can't hit the barn from the inside

OP? to me it's on the border of realistic and under powered. 19th century artillery vs. open targets 1 kilometre away? pfffft. the radius of shrapnel and shockwave would be much higher in reality... so its under powered in a way.

The AI usually builds their units with the intention of attacking you. You kinda have to wade through bodies on your way to any AI province
Not a fair video... Probobly easy difficulty and also you have tons of armstrongs and marines and guards, maybe even cheatengine for money
