    As a stressed, 40-year-old primary school teacher, Kate succumbed to inflammatory arthritis, later diagnosed as psoriatic arthritis. It seemed like every joint in her body was inflamed and in hindsight, she realised that she had suffered a few previous undiagnosed attacks over the years, but this was the most debilitating. Everything was extremely painful if not impossible; walking, sitting, and even sleeping. She was signed off work for a year. Thankfully with medication, her condition was brought under relative control. Soon after, 15 years ago, and with support from her husband, she embarked on a vegan diet and was able to slash her medication by more than half.
    Four years ago she discovered a whole food plant-based (WFPB) diet, and it’s amazing restorative and disease preventing benefits. At last she is completely in remission and medication free.
    With a new lease of life, she is an active community member, founder of Hunstanton Community Orchard, graphic designer, ceramicist and community arts provider. She loves cooking and growing vegetables. She is a passionate advocate of plant-based nutrition and exercise, now runs half marathons regularly.
    She is beyond thankful that there are plant-based doctors and other health professionals who are championing a WFPB diet so that other people need not go through the torture of psoriatic arthritis and other dreadful health conditions. Kate’s story has been published in the American Journal of Lifestyle Medicine.

    Dr Shireen Kassam is a Consultant Haematologist and Honorary Senior Lecturer at King’s College Hospital, London with a specialist interest in the treatment of lymphoma. She is also a Visiting-Professor at Winchester University, Hampshire, where she has developed and facilitates the UK's first University-based course on plant-based nutrition.
    Shireen is passionate about promoting plant-based nutrition for the prevention and reversal of chronic disease and for maintaining optimal health after treatment for cancer. In 2019 she became certified as a Lifestyle Medicine Physician and is also a CHIP facilitator.
    Shireen founded Plant-Based Health Professionals UK in 2017, a non-profit, membership organisation whose mission is to provide evidence-based education on whole food plant-based nutrition. In January 2021, she co-founded and launched the UK's first regulated, plant-based, lifestyle medicine healthcare service Plant Based Health Online.
    Shireen qualified as a doctor in 2000. During her training, she completed a PhD, which investigated the role of selenium in sensitising cancer cells to chemotherapy. Shireen has published a number of peer-reviewed papers in the field of lymphoma.

    Kate's story is amazing! I'm so glad she followed her intuition rather than listening to her conventional doctors. Yay for finding her passion in being a vegan runner! 💜🏃‍♀️

    I love Kate's story, it is similar to my own. I was diagnosed in my late 40's with osteoarthritis and put on three different medications and told that it would only get worse in time. It was so depressing to be so young with a degenerative disease. My husband told me about a conversation he had at a work lunch that led me to watch Game Changers and then Forks Over Knives and that convinced me to try WFPB. I went all in, and within 4 months I was off all my medications! My rheumatologist also doesn't think it is food related but I completely disagree! Kate and I are proof that this works! Way to go Kate! And thank you Chef AJ for featuring such uplifting and important stories!

    Sure sounds like dairy. That was what caused my joint issues. I have had no issues as a vegan for 10 years. Currently 70 years old.

    Loved Kate's story/information. I needed to hear it today... feeling a bit tired today, but i had a light bulb moment when Kate mentioned stone fruit... then I remembered how many dates I'd eaten recently, so my lethargy made so much sense!

    As the UK has free healthcare, I would have thought it would be financially beneficial for NHS to promote wfpb (sos free). America on paper would be harder to convince due to large pharmaceutical companies and meat and dairy association having such a grasp on legislation and money.

      There is I believe still a lot of lobbying by the pharmaceutical companies, along with the meat and dairy industries here in the UK. General Practitioners receive very little training about nutrition. Hopefully one day we will all get there; a WFPB world might slowly heal!

    I ate a lot of sugar on Chrismas dinner, like cake and sugary desserts, 2 hours later my left elbow was so inflamed and painfull, could not lift it up to touch my nose, like my cells in my body was punishing me for eating all this sugar lol.

    Thank you for having this psoriatic arthritis story on. I have been on WFPB for 15 months. Still on meds coming from high weight loss. I have hope it will go away now.

    I have Ra. I get monthly infusions I still have pain thru my whole body. I am going to change my diet to Wfpb diet. I am sir it will help me.

    I am still struggling with food. I am a diabetic and having premenstrual and postmenopausal issues, gaining weight and depression low energy..what to do??

      Read one of Dr. Joel Fuhrman or Dr. John McDougall's books, or go to their websites, and just start. Find your 'why' to keep you motivated. Dr. Brooke Goldner has a green smoothie protocol that can knock issues out more quickly. Google these doctors. All the best to you!

      I'd also suggest Dr Barnard's book Your Body in Balance because it deals with hormonal/menstrual issues. Think about why you want to change, your health issues will help motivate you, and once you start seeing the benefits and feeling better, you'll gain momentum to continue.       Stop dairy in all forms. Then work on stopping oil. The books above are good resources, and look their websites.

      Google it for lots of info. It's eating only vegetables, fruits, whole grains, legumes, nuts, and seeds in whole form.

    My son is 29, has down syndrome and chronic psoriasis. We have already tried used the biological injection. I'm afraid of the side effects.. Trying the natural way, but the psoriasis is coming back. It may be his gut. Any help with diet? Like taking away 1 thing at a time? It would be very helpful.
