    What you need for this Squash Casserole Recipe
    2 lbs yellow SQUASH sliced thin
    1 medium CARROT grated
    1 Lg ONION chopped
    1 EGG
    8 oz SOUR CREAM
    8 oz BREAD CRUMBS or SALTINE CRACKERS
    1 cup grated CHEDDAR CHEESE (or use your favorite cheese)
    ¼ cup freshly grated PARMESAN CHEESE
    1 tsp GARLIC POWDER
    1 Tbsp ITALIAN SEASONING
    2 Tbsp BUTTER
    1 Tbsp OIL
    SALT and PEPPER to taste
    How to Bake a Squash Casserole
    Heat 1 Tbsp butter and 1 Tbsp oil in a large skillet on medium high heat, then add in the squash and onion. Sprinkle with salt and mix well. The salt will help draw out water from the veggies.
    Stir the veggies for about five minutes, adding the garlic powder and any other seasonings you desire.
    Once the veggies have softened, remove them from the skillet and place in a colander to allow some of the water to drain off. Press on the veggies to squeeze the water out.
    In a large bowl, whisk an egg, then add in the squash, onion, cheddar cheese, carrot, sour cream, Italian seasoning, and half of the breadcrumbs or crackers. Stir until everything is well mixed.
    In a small bowl make your casserole topping: combine the remaining bread crumbs with 1 Tbsp of melted butter. Mix in theParmesan cheese.
    Pour the casserole mix into an oven safe dish and then top with the bread crumb topping. Make sure the casserole topping is level so it will cook evenly.
    Place the casserole in an oven preheated to 350˚F and bake for about 30 minutes, or until the breadcrumb topping turns golden brown.

    2 lbs. of summer squash. Sautéed onion, cheddar cheese, sour cream, topped with saltine or Ritz cracker crumbs sautéed in butter. Bake for 30 minutes at 350 degrees F until topping is golden brown.

    I love squash casserole! Some variations I do is instead of sour cream (which is yummy) I have used cream of mushroom soup or cheddar cheese soup. Also another trick I use is I core the squash. Cut it into 2 inch chunks then push an apple corer thru it then slice it as you did. This makes for a "meatier" dish as it gets rid of a lot of the watery seedy center. If I want it as a main course I add ham or hamburg, sausage, heck even spam works! Anyway, my 2 bits worth on this wonderful dish!

    I got one, steamed (3 medium) yellow squash, 8 oz of sour cream, can of cream of chicken, mix. 1 box of stove top, melt 4 TBSP of butter melted, mix in stuffing. Put 3/4 of stuffing in baking dish put squash mixture then add 1/4 stuffing. Bake at 350 degrees for 25 to 30 minutes. Its so goo.

    I made this. Delicious. No watery business at all but also just right amount of creaminess (not soupiness!) The grated carrot was a nice touch too. Even my very southern neighbor said - guess what, she likes YOUR version best. Thanks so much.

    I have mostly just used squash with bacon simmered in a pot. This looked great with all that cheese and sour cream. You really squashed this one.

    Looks wonderful. Thanks for NOT putting sugar in it. Pretty often when I have it here in Houston people put sugar in it. Sugar is for desserts. In fact, so many put sugar in every dish. I'm not of that side of the family. Gotta try this.

      I think of squash as being kinda sweet already, and with cheese and sour cream and a toasted bread crumb topping, it already feels like a decadent side dish to me ...I think if I added sugar it'd be a full-blown dessert dish for sure

I always do my best to make a diabetic friendly alternative for my son to whatever i cook for everyone else and this recipe was a really good altervative.

    I have always used Pepridge Farms Cornbread in a bag and mix with Butter for crispy topping. It really does add a better southern taste to the casserole. Try It,

    My daughter used Dot’s Pretzels as the binder for crab cakes. Really worked well. I bet it will be great in the squash casserole, too.

    I tried this recipe with long squash from the Asian market instead of the traditional yellow squash. I salted and rinsed the squash before I fried them to pull more water out of it and I did add a little bit of paprika because I was doing it from memory and forgot you said not to do that. Lol. Turned out great! The panko makes it nice and crunchy on top.

    I’ve been overwhelmed with yellow squash in the garden and made this tonight. It was sooo good. My husband said he wants to have it once a week until gardening season ends. I left out the carrots and onion because I didn’t have any, but it let the squash take center stage which was nice. Instead of the panko and saltines I crushed up cornflakes so it would be gluten free.

      I can't believe how regular I've been on the uploads...we've definitely been cooking more, and we always cooked a lot--it's weird to think of how long it's been since I was in a restaurant--it was definitely back when we were in Mexico

      I'm 75 and I'm retired and I was a single mother and I raised three grandchildren but what I would do I would do all my cooking and preparation on a Sunday and I would have it by that time to visit that all my kids are my grandkids that time where teenagers because I was still working so when they come home from school if I'm late because I had my own turn key service sometimes I wasn't always home at time time to prepare the meals all they had to do to get it out of the freezer put in the microwave I spent all day Sunday preparing and all the bills for the whole week and of course they had their job sandwiches whatever else they want any between that's how I've done it but I'm retired now I only cook when I want can you cut a wonderful meal for your family that is telling them how much you love them

    Casserole looks good. I make one similar except I add about three quarters of a pound of andouille sausage split in half then sliced about 3/8ths of an inch or so.

      those are the best neighbors to have! CG's mom has farmer family in South Georgia, so she's always gifted with tons of produce and we get to help her eat it

    I make Aunt Fannies Squash Casserole from Smyrna GA. We add a teaspoon of sugar, Two eggs melted butter and milk, delicious! Sometimes add cheddar chees

      this is one of those dishes that reminds me of being a kid...although I probably didn't love it when I was a kid cause of the word "squash"

    Never had that kind of squash casserole... mom made it with sausage, squash, tomatoes and cheese.. it was really good too.. I believe she put flour on it too

    I know of something you can do with those extra bread crumbs. Go around the edges and gentle pull the sides in and wedge your extra crumbs there. They usually brown nicely. You keep a thin layer on top and there is no waste.

    Stove top stuffing is delicious on top,too!
