We once went to a special restaurant to chomp on some fried testicles, pity they were out that day. Or rather, good they had none 👍, was the "weird guy"'s idea anyway in our company 😶
An interesting idea for a video would be if you did a 'pot luck' of sorts. Write down a bunch of styles/genre(?) of foods, put them in a hat, get Guga, Kent, Uncle Roger, and some other cooks, draw one of the items, and make your favorite dish from that style/genre. Maybe for a Christmas / Thanks Giving dinner thing. Hope I explained that well enough, but love your videos, keep up the good work!
I love these guys. Frenchie adds such a nice extra dimension to this channel, he balances out Chef Brian’s seriousness perfectly. I always end up finishing these videos with a smile, thank you guys!

I've had lamb fries from a sheep we've harvested. And as Frenchy said, they are a bit salty but they are tender, juicy, flavorful, and as long as you prepare/cook them properly they are amazing.

It would be great if you both were to join Cowboy Kent on some collaboration videos. It would be interesting to see you adapt your recipes to wood stove/dutch oven cooking. Maybe make a chili or stew in a Dutch oven, or a French or Chinese or Korean version of a paella (Korean Army Stew?) in a large frying pan?😋

The American school system isn't great, so we barely know out own history. So Thank you Frienchie for bringing those pearls of info, I had no idea that ranching/that genre originated in Southern France and went to Spain then the Americas.
Some more western history...after the USA took over the southwest from Mexico, the original American cowboys were actually former slaves. Ranchhand work was some of the easiest that they could get because they had the skills, including the horse riding. They were pretty amazing too. There is a new movie about the REAL lone ranger, who was in fact a black man. History is awesome 😊

There is a restaurant in Calgary, Alberta that serve Prairie oysters every fall. It's a huge event and has been going on for something like 30 years.

Rochester is not upstate NY it's western NY because i live in Buffalo and Rochester in only a hour drive. upstate is the actual upper part , like adirondack mountains.

My grandfather and my father were farmers. My parents moved to the suburbs and we grew everything. We grew sheep. Yes, farmers grow cows, sheep, potatoes, corn, etc.

For the Taylor Swiss sandwich do you use NJ Taylor Pork Roll (Aka Taylor Ham)?
I have never eaten Rocky Mountain Oysters.. but you can bet I would try them given the chance! .. I grew up with a Mutti (German Mother) who could make tasty food out of practically nothing...and using offal was a regular menu choice. ..It's a real shame it isn't more widely eaten today.
As an Asian, offal are great snacks lol
Offals are delish despite being frowned upon by those with limited palette and tastebuds yet to be expanded upon.

Ribeye is a pretty traditional cut for chicken fried steak and it's absolutely delicious. It evolved out of schnitzel from German immigrants to Texas and the Midwest during the mid 19th century. Double breaded isn't my preferred style, but I guarantee you it's not ruining the steak, especially served with some country gravy (which is basically just bechemel with black pepper)
Definitely check out Kent Rollins, he's awesome. You can even check his Beat Bobby Flay episode, or his stint as Chopped contestant which was interesting and threw people off for sure.
We love the hon-hon. As a French-Canadian I hon-hon quite often.
