  • How to make an apple pie filling.
    Peel and core your apples. Cut into 1/2 inch chunks.
    Mix the lemon juice and cornstarch together before adding.
    Granny Smith recommended in the recipe but I used locally picked apples from a farm nearby. No idea what kind as I didn’t pick them, so thanks Sarah for the apples.
    Ingredients:
    6 large Granny Smith apples
    3 tablespoons butter
    ¼ cup fresh lemon juice
    1 tablespoon cornstarch
    ½ cup granulated sugar
    ½ cup brown sugar
    1 teaspoon kosher salt
    1 teaspoon ground cinnamon
    ¼ teaspoon ground nutmeg

    Never just dump dry cornstarch into a hot dish unless you want gross lumps 🙄. Make a slurry of cornstarch and a bit of water, stir smooth and pour in while stirring.

    Just what im looking for! Can I store it in the fridge? How long can it be stored? Will it stay crisp?

      I would say it can be stored for a week in the fridge at best, 2 weeks at a push. I haven't checked how it fares when it is frozen yet. As always, check for mold (especially in the second week).

      I have any jars that I've canned that are full of homemade apple pie filling and it stays good for years

    How do you get the corn starch to not clump up when you add it? ❤

      use a wooden spoon, stir it constantly while you add it. If need be, smoosh the clumps and stir.

    How long do you cook the apples in the butter before adding the lemon juice/cornstarch mixture please?

      1-2 minutes while stirring, this will make sure they're coated. :)

      corn starch binds better than flour, you CAN use flour, but you will need more.

      Yes, I keep mine in the fridge. my current batch has been in for a month, and tastes fine. I am still figuring out the use by date.

    might be a dumb question but when i bake this do i need to make anything to place on top or can i just dump this filling into a pie crust and bake?

      You can just pop this into the crust and bake till it caramelizes. :)

    Does it have to be Granny Smith apples

      No, but Granny Smith/green apples tend to have more of a sharp bite to them so stand out more in fillings. Softer flavored, or sweeter apples can sometimes lose that “apple” flavor.

      Cinnamon, ginger, nutmeg, and cardamom. I used to have a set amount I put in, but now I use my heart when measuring it and always add more to taste.

    why do people cook the mixture when it’s gonna go into the oven?

      To make sure the apples are all cooked through when the crust is done, and also to cook them down a bit so they don’t shrink so much inside the pie crust when cooking.

    Why are you cutting the apples like that? They aren’t suppose to look like breakfast potatoes.
