    Wiping rim after filling the jars is a missed step here. Good chance of not having them seal. Cleanliness is next to....well you know.

    Are the rinds left out at room temp during the brine step? Or do I need to refrigerator during the brine step?

    Now doing the bath doesn't the rinds cook some more in all that hot water? Won't they be mushy?

    Just found your recipe. It's been 2 years, but for beginners could you: tell us measurement of skinned and cut watermelon rind and also how much salt and water you use for brine? Thanks

    Is the brine 1 qt water, 1/4 cup salt? The same proportion as the watermelon candy?

    These seem like they would be very sweet and sorta soggy with all that soaking and cooking before the processing. Has anybody tried this? How are they?

    OMG peeling each small piece one at a time will take so much longer then to peel one large piece.

    Or just pour juice over rinds in jar..slap in frig,,,eat in 3 days

    would pickling work with less sugar?

      I know where you are coming from--- when I use a lot of sugar I only eat a few, but in other receipts I have used apple juice instead of sugar, to do the canning, and it worked out really great, just as long as you process the jars the proper time there should be no worries. --- Don

    Why take off the out side green skin. Are there a lot of vitamins in outer skin???

      just the way my Grandmother would do it. you may leave the green on.
