I didn't say e should make jam without boiling it, we just shouldn;t do it 3 times and pour the water out twice down the drain losing all the nutrition, natural sweetness and flavor, just boil once an I make mine after slicing the kumquats, not whole... they are sour inside and when you will bite into one, that sour taste will be too much... and sweetness doesn;t permeate inside. Then I fill crapes with it. Of course you can make it whole if you like the contrast between sweet and sour.

I would not discard the water it would have a lot a fragrance in it.
i use the water for cold brew tea, add sugar for taste, voila…kumquat flavored tea
