The 5 official albums are Fallen, The Open Door, Evanescence (Self titled), Synthesis and The Bitter Truth.
I suggest you to skip Synthesis or leave it the last because it is a remake of old songs into orchestral arrangement. It only has 2 new songs in it.
I recommend another 2 hidden albums which is Origin and Lost Whispers. Origin is their first ever demo album before Fallen. Lost Whispers is a compilation of their B-side songs.
