    **RECIPE INFO**
    This is my FAVORITE "GO TO" chocolate cake recipe! Courtesy of my cake guru Warren Brown! It is so moist and decadent. It melts right in your mouth! It's beyond delicious! In this video I made a SINGLE BATCH of this recipe to fill three 6" cake pans. Following is the recipe which can be easily doubled or tripled (or more if you have a large mixer like the one I used in my video). A single batch is the perfect amount for three 6" cake pans, a double batch is the perfect amount for three 8" cake pans, and a triple batch is the perfect amount for three 10" cake pans.
    Chocolate Butter Cake Recipe:
    ~14 oz. extra-fine granulated sugar (1.75 cups), or 13 oz. at high altitude (1.5 cups + 2 tbsp)
    ~1.5 sticks (6 oz) of unsalted butter (at room temp.)
    ~7 oz. unbleached all-purpose flour (1.25 cup + 2 tbsp), or 7.25 oz. (1.25 cup + 3 tbsp) at high altitude
    ~2 oz. unsweetened cocoa powder (0.5 cup), or 2 & 1/8 oz. (0.5 cup + 1 tbsp + 1/2 tsp) at high altitude
    ~1.5 tsp baking powder (or 1 tsp at high altitude)
    ~1 tsp salt
    ~1 cup half 'n half (1 cup + 2.5 tbsp at high altitude)
    ~2 tbsp brandy
    ~1 tbsp pure vanilla extract
    ~4 large eggs (5 eggs at high altitude)
    *Alcohol-free variation: Omit the brandy and increase the half-and half by 1 tbsp.
    **Cocoa Powder Info**
    The cocoa powder you use makes a BIG difference! Cocoa powder readily found in grocery stores (10% - 12% cocoa powder) works great! BUT, if you want a full, rich, and unforgettable flavor, attempt to use a full-fat, unsweetened, Dutch-processed cocoa powder with 22% - 24% cocoa powder. That's about double the cocoa powder you find in grocery stores. If you can get a hold of this kind of cocoa powder, try it. You'll LOVE it!
    Conventional oven: bake at 350°
    Convection oven: bake at 335°
    *My cakes usually take about 35 minutes to bake. Depending on where you are it may take less or more time. (Sea level somewhere around 28 minutes, and high altitude somewhere around 32 - 35 minutes). Base the "doneness" of your cake by how it "looks". You know your cakes are done baking when the tops are en even dark brown color, and the sides of the cake have pulled away from the pan. "Test" for doneness by inserting a skewer or cake tester. If it comes out clean or just has a tiny touch of crumbs, they're done. Let them cool completely before taking them out of the pan. I like to wrap my cakes in plastic wrap and leave them in the fridge over night before icing them the next day.

    This is a great recipe. For the second wedding cake I've made so far, the bottom tier was made with this recipe & it was a hit. Everyone loved it. The top tiers were the vanilla butter cake from this channel. Both great recipes. Thanx again for sharing 😊

    Hi Laura, I notice that in your vanilla butter cake you use potato starch but you don't use it in your chocolate butter cake, may I ask why?

      HI Wanda! Yes of course. The cocoa powder takes the place of the potato starch. The cocoa powder adds the density the cake needs (which is what the potato starches does for the vanilla cake). I hope that helps. God bless you! :)

      Thank you so much Charty! That's very kind of you! There's really not a replacement for it. Half 'n Half is half whole milk and half cream (the kind you put in your coffee). If you can't find half 'n half in your country then you may want to just try mixing those two ingredients together.     You guys are such a beautiful couple. I just made GodzIlla Butter cream cake every everyone raved about it. My question is for the Chocolate Butter cake I want to make an 11x 15 sheet cake if I double the batter would that be enough also how long should I cook it for and the temperature using a Convention oven.       Hi Janet! Thank you so much for your sweet words. We really appreciate you watching. :) So glad everyone liked it. That's wonderful! I would probably triple the batter to be on the "safe side". If you have extra batter you can make a couple of 6" cakes (for the munchies like my hubby does, LOL). I would leave the cake in the oven for a good 10 more minutes, but be sure to look at it (light in oven) before opening the oven door as this sometimes causes the cakes to collapse. If it still looks very wet and jiggly in the center than leave it a bit longer. For much larger cakes like this it's really just "eyeballing" it to determine whether or not it's done. To help your cake bake evenly you may want to place a couple of flower nails near the center. I hope that helps and thank you for watching! :)

      annapurna addanki hi! There is no replacement for the half and half. This product is half milk and half coffee creamer. Perhaps you can find a recipe online that shows you how to make it from scratch.

I'm baking it in a 12x12x3 square cake pan should I double the recipe for this pan, how much batter for this pan, what oven temp and how long should I bake it for.       That makes us SO happy Janet! Thank you so much for this wonderful feedback. We appreciate you watching. Yes, definitely double your recipe. Good thinking! :) Always fill up your pan halfway (no matter the height of your pan). Start by baking the same length of time we mention in the video (description info under video as well) and at that point just visibly check for doneness. If it "looks" ready, then just quickly open up your oven and test the center with a skewer or tester. If it comes out clean, you're good. If not, leave it another 10 minutes and then check it again. When baking with larger pans, it's a lot of constantly checking. I hope that helps. :)

    Hi! I was wanted to know if you only use wilton cake pans or if you used other brands. I'm currently using fat daddios pans and I always get them 3 inches deep but I have a feeling that the pans burn my cakes.

      Hi Brittany! I hope you're doing great! Some of our cake pans are Wilton and others are Fat Daddio's. I'm sure we have some other brands mixed in there as well. LOL. I do have to say that from all of the ones we have, Fat Daddio's are our favorite! Ours are also 3" in depth. If your cakes are burning it's only because you're leaving them too long in the oven. Hope that helps! :)

    Hi Laura!!! Made this cake and it was the best!!! I need to make a 10 inch cake, so wanted to know how many batches can I make at the same time in a regular kitchen aid mixer?

      Hi Zulema! That's so awesome! Glad you liked it! :) I would probably make 2.5 batches if you want to make three 10" layer cakes (for one cake tier). We use a larger mixer so I know we can fit all these batches at once but if you're using a smaller mixer then I would probably split it in half. I hope that helps. :) Thank you for watching!

    Hi and thanks for all your tutorials! I am pretty sure but would like to just confirm, baking the cake takes the alcohol out of the brandy, right? I would like to make cupcakes with the recipe and take to work, but I am a little concerned about the alcohol. Or if I were to use at a kids event. Thanks so much!!!

      Hi Terri, You're very welcome. Alcohol begins to evaporate at 172 degrees Fahrenheit (78 degrees Celsius). The longer the cake is in the oven, the more alcohol evaporates. However the only way to 100% get rid of all the alcohol would be to leave it for longer than one hour in the oven, which you definitely don't want to do. Brandy does give this recipe a delicious added taste which the amount is so small, it is not harmful to children, HOWEVER, if you don't want any brandy in the recipe at all, my suggestion is to just omit this ingredient. The cake is still VERY delicious without it. I hope this helps. :)

    Love you guys. I have made this cake several times delicious. This time I want to make it in a 5 inch round 2 inche cake pan, 3 layers, do you think one bactch will be enough, how much batter for each pan and how long should I bake them. Do I still set my oven at 350? Thanks so much for all you Videos and you guys continue the good work. We love it.

They should be slightly below or at half the height of the pan. Yes, always bake at the same temp. Hope that helps and thanks for watching. :)

    Wrap the outside of the pans with wet cloth and the centers won't bulge up. Baked cake will be flat.

    I live in Ireland and have'nt a clue what half n half is. Can someone please tell me what it is.

      Hi Jackie! Thank you for your question. I just looked up what the equivalent of half 'n half is in Ireland and there is none. Half 'n half here in the United States is a simple blend of equal parts whole milk and light cream. It averages 10 to 12% fat, which is more than milk but less than light cream. Due to its lower fat content than cream, it can't be whipped. Half-and-half in some countries is known as "half cream" like in the United Kingdom. In other countries such as Australia it is known as "single cream". You may want to experiment and try making it yourself by whipping together whole milk and light cream. I hope that helps!     First let me thank you for all your tutorials. I'm actually learning all my techniques from you both. I've tried the vanilla butter cake and its quite awesome. I tried the chocolate butter cake and my batter was a bit on the thin side. I'm not sure where I went wrong. It still was moist and delicious but not like the vanilla cake. I'll be remaking this cake tomorrow.

      Hi! You are VERY welcome! Glad you're enjoying them! Hmmm.... I wonder what it could be as the batter should be quite thick. You can kind of see the consistency as the batter is dropping into the pans. Did you use half 'n half? Be sure to go over all of the ingredients and try it again. I'm sure it'll come out perfect the next time around. Please let me know how it goes. God bless! :)

      Just an update it came out perfect the second time. Faulty scale was the problem.

      We've never used this recipe to make cupcakes so I'm sorry that I can't give you an estimated time. I would recommend just watch and see. :)
