Oh my word....!! I love coconut cakes !! They remind me of my Granny . She would make them every Christmas and she would make 6 or 7 thin layers of cake . She would make her homemade icing too and put it on a cake platter just like this one you used Miss Paula . She also put hers in the refrigerator . Boy... those were some delicious cakes !! Jamie sure is lucky to have a mama that will bake him his favorite cake every year for his birthday . I'm sure you always made your son's birthday's very special too . 🎂❤❤❤

Now that's a TRUE Coconut Cake! People don't realize the difference this frosting makes. You called it Divinity frosting but it's also like 7 Minute frosting. When you've had this one, you'll never be satisfied with cream cheese icing on a coconut cake. The filling must take this right over the top. My husband doesn't like coconut but you can bet the next time we have company I'm making this one! ☺
this cake recipe is on the back of Swans Down cake flour box, (only the cake not the icing) the difference is, she uses self-rising, Swans Down calls for baking powder and salt. I've Made it many times and it is so moist and delicious. may try her filling, it looks tasty

I like these old videos. Paula seems so different then. No big hair, and tons of make-up. More toned down and natural, even her accent wasn't as pronounced.
Her accent and her cackling laugh has gotten heavier in the new videos and you would think she would be more reserved. The production crew and the Food Network probably kept het toned down.

The 7 minute frosting is a old fashioned recipe. Just don't make it on a rainy damp day. That was my grandmother s advice. She made the best walnut divinity.
my family loves cream cheese frosting but this looks like it spreads easier but i’m curious what this type of frosting taste like...is it like the whipped frosting?

After frosting, I put it in the fridge Christmas morning until ready to serve that afternoon and the 7 minutes frosting had become loose and was sliding off the cake. It looked just like hers in the beginning but after a few hours in fridge it was a mess and ugly! How do I avoid this again? Should 7 minute frosting not be put in the fridge?

Yes. My mother always put her cake like this in a Tupperware (air-tight) cake container. She called the process "ripening the cake" and she also let it sit in the fridge for three days. By the way, the frosting is called "seven minute frosting" and it is used on other cakes as well without the coconut flakes. This is a very good cake.
Please can i ask for a more accurate measurement. When you say cup of sugar or what ever, it would mice to know either what size cups that's is or better still how many ounces or frames please.
As for the filling, I kind of eyeballed it the first time I made this cake, based on my observation in this video. 1/2 cup of sugar 1/4 cup of sour cream 1/3 cup of coconut 2 tbsp of milk

Does it have to stay in the refrigerator for three days before eating? What if it’s just overnight?
instead of refrigerating the cake , I put it in freezer a few hours. It does the same thing and comes out so moist.
