    Vestal Goodman made the best coconut cake ever, since we’re on a southern thing. Not only was she known as the Queen of Gospel, but was well known for this cake. She made a 7 min frosting to go on it

    When it comes to cakes, I always always do one egg at a time, if not, your cake will not come out right, the layering will be weird and it just won't be consistent throughout, so make sure you always incorporate one egg at a time when you do that, you will have a very smooth and beautiful cake, great job with this cake definitely going to try this recipe and I love that it's homemade a lot of people proclaim they are doing homemade when truthfully a lot of this stuff, is instant, I hate when people say it's homemade when everything your adding, is instant and I'm like stop lying it's ridiculous, so loving your recipes, loving that it's actually homemade.

    My Mom used to make the best coconut cake from scratch…not sure if she ever used a cake mix, but I doubt that she did. She put pineapple between the layers using crushed pineapple in heavy syrup (20oz can) adding flour or corn starch to thicken it, slathering it with 7 minute frosting and covering it all over in coconut. My daughter in law and I made it a few years ago and it turned out perfectly, and since it was at Christmas time we sugar coated some sprigs of greenery and some berries to make it look over the top beautiful, and it did. So this past Saturday (12/24) I was at my son’s and daughter in law’s and while they were at an event I couldn’t go to I decided I’d get started on the coconut cake. I had mixed the dry ingredients at home and brought them with me. So I just added the wet ingredients. I thought it didn’t look like much batter, but I really don’t bake much anymore so I just put it in the pans, cooked it, took the layers out of the pans to cool, and kept thinking how small they seemed, finally picked up that recipe and looked at it again, seems I left out the crisco! I tossed those layers out. Christmas Day everyone is napping, I decide I’m going to have another go at it, but this time I’m using John Kanell’s recipe from Preppy Kitchen. It turned out well, loved the texture, but left it out uncovered too long! Daughter in law and I went ahead and made the 7 minute frosting, started assembling, but it did not look beautiful at all, no matter, we were sure it was going to taste good. Well it didn’t. It was tooooooooo dry. Daughter in law and I
    choked a piece down, I had a piece for breakfast and she asked if I wanted to take it home with me, I declined. I know it got tossed out too. That wasn’t our only disaster, a container of raw cookie dough fell out of the fridge, made a huge mess on the floor and then the steaks we cooked for dinner weren’t perfect either! I’ll be 80 in a few months, I’ve been cooking and baking since I was 16! I’m a Texan and I messed up beef! I don’t think my Mom ever had a baking failure, although I remember that she did cook a pineapple upside down cake, cooking all of the batter and pineapple in a dutch oven, and once she turned the cake out of the pot she spent a very long time putting the pineapple back on the top and sides of the cake, she finally finished it when the cake had cooled completely. That was the only time she made a pineapple upside down cake in a dutch oven. I loved the cake….again she used crushed pineapple, which is what I have always used as well simply because she did. I have no idea why everything went south for us this year….maybe the stress of my son, (her husband) being diagnosed with leukemia in September just keeps our minds from staying on task! He’s doing pretty well though.
    Anyway your cake looked amazing! I’m sure it tasted amazing too!

    Have you ever made yours with egg white instead of the whole egg? Have u ever not used the mixer/mixed it by hand?

    My mother cracked a fresh coconut and drained the water and before the frosting she would put the water over the layers to soak in and then put icing and coconut on it.

      My granny used to do that, but she would add sugar to the coconut water and boil it into a syrup and pour that over the layers after she poked them with a toothpick. When it got cold, the sugar would crystallize and have a slight crunch. I loved that so much!

      She's a sloppy cook, her cakes 🍰especially the top doesn't look done. Her cooking is not attracted, he's patting the cake with her naked hands!!! I don't like her video.

    @Jan Charles new to the family's 1-29-23 @4:13 pm Florida time looking at the video as u was saying about the salt butter I'm use to that in the country of Alabama, I didn't star using unsalted butter until I move here in Florida ,and Also the All-purpose Flour my Dad as Grandma, in Grandpa use self-raising flour in can't remember none of my Aunt's or Uncles use unsalted or All-purpose Flour but any who I want Receipes of cakes use Self-raising in salted butter but now I'm use to unsalted in All-purpose Flour now but anyway I'm just going on in on with that's but anyway glad to be part of the delicious Recipes that u sharing with Us God bless u in your Family's ❤️❤️❤️😘😘😘😘🙏🙏🙏🙏
