Ginger Jujube Tea : DaeChuCha 대추차

- How to make jujube tea, a traditional Korean tea
Korean people drink jujube tea to prevent a cold in winter. It smells really good when you make jujube tea using dried jujube and ginger.
Ingredients
dried jujube 370g, ginger 40g, water 2.6L, a bit of pine nut
Procedure
1) Rub and wash jujube in water about 3 times.
2) Put them in water for 10 minutes and wash again two more times.
3) Slice ginger.
-The gentle scent of ginger makes jujube tea even better.
4) Put jujube, ginger, water in thick pot and boil in 'high heat'.
5) When the water boils over, change down to 'middle heat'.
6) Boil for 1 hour.
7) Put stainless basket in bowl and pour the jujube water.
since water is hot it is better to use stainless basket.
8) Take out ginger and crush the jujube.
9) When it is all crushed, leave the remaining water and remove the jujube to other plate and crush again.
10) Pour the remaining jujube water gradually and crush the jujube.
this can make taste much deeper jujube tea.
Having jujube tea with pine nut topping is much nice.
