Just a heads up you should look into home canning the left overs! I’ve been obsessed with home canning. The only thing is pumpkin is probably considered low acidic so you would have to pressure can the leftovers to prevent botulism. There’s certain steps you have to take with low acidic foods such as veggies and meats.
Your not supposed to pressure can pumpkin either actually! Much like bananas the consistency is so thick and fibrous it wont heat evenly! You can check the health and safety quickly online! But it wont heat through regardless of acidity

Lovely recipie.. I would like to add one I know... After cooking pieces of pumpkin... We add jaggery to it.... Mix it.. Once cooled.. We add wheat flour..and some cardamom powder to add flavour. Sufficient to form dough... We make small balls.. N roll it... to make puri... And then we fry it deep in oil.. Or ghee...

Pumpkin bread and spicy pumpkin soup are favorites in my house. Though I recently got a recipe for pumpkin tea bread that looks interesting too😋
I had no idea what a baked pumpkin looked like that is definitely not what I expected it to look like either
Ooh how about a savory soup 🤗
