Is this technique exactly the same as the one khabib used? I am Japanese, so I don't know the details, but is it elbow to elbow gut wrench?

Does that gut wrench have a name in judo? Also, is it easier to grab part of the gi instead of your own hands?

The closest name is Daki Wakare. It's called a gut "wrench" for a good reason. The tight grip works well, but the best thing to do is to experiment at practice to see which you prefer.
