Mother Noella, of the Abbey of Regina Laudis in Bethlehem, Conn., is a master of the sacred art of traditional cheesemaking. Mo Rocca pays a visit to her dairy farm.
She's so cool. You hear the phrase "live your truth" bandied around a lot, but this woman is the embodiment of that idea. She gets to do what she loves, make something beautiful to give to the world, and live in peace. We should all be so lucky.
Liebe Schwestern, danke. Ihr beweist, ein gutes und liebevolles Leben ist möglich. Wir benötigen so viele Menschen wie Sie; Schwestern als auch Brüder; welche uns einen guten Weg aufzeigen.
I've stayed at the Abbey guest quarters many times. This Community is full of "rock stars" with PhDs and all kinds of extraordinary accomplishments. An amazing and inspiring group!🙏❤👍👏

No worries (I apologize if you’re being sarcastic) actually many cheeses have mold on them at one point or another including cheddar (if it’s cloth wrapped or a farmhouse cheddar.) Camembert and Brie are excellent cheeses I’d recommend highly if you’re looking to get into moldy cheese cheeses thoug Stilton and Gorgonzola are also really excellent the smell tends to scare off most new comers, as well as the strong taste which can assault unfamiliar palates. That’s not to say they taste bad, they’re just strong.
I consider these ladies my good friends! I love this Abbey and all the Sisters.🙏🙏🙏 God bless you Mother Noella and everyone at the Abbey.
Love the sense of humor on these Sisters'!
God bless you Sister🙏❤️greetings from the Philippines 🇵🇭.

I am confused, you can actually eat aged cheese with mold?
Yes. In fact some cheeses with mold are quite desirable.
