How to make this yummy, healthy breakfast:
Ingredients2 cups rolled oats 1 1/2 tsp. baking powder 3/4 tsp. salt 2 Tbsp chopped pecans 1/4 cup raisins 2 cups diced apples (I used Granny Smith) 3 eggs 2 cups fat-free milk 1/2 tsp. vanilla extract 3 Tbsp Splenda brown sugar blend (or 1/3 cup light brown sugar) 1/2 tsp. ground cinnamon 1/4 tsp. nutmeg - See more at: www.eat-yoursel...
InstructionsPreheat oven to 325 degrees F. Grease an 8-by-8-inch baking dish and set aside. In a small bowl filled with hot water, allow raisins to soak for about 5 minutes until nice and plump. In a large bowl, mix together oats, baking powder and salt. Stir in apples, pecans and raisins, then set aside. In another bowl, whisk together eggs, milk, brown sugar, cinnamon and nutmeg. Pour over dry mixture and gently stir to combine. Pour everything into greased dish and bake for about 1 hour, until golden brown. Serve and enjoy! - See more at: www.eat-yoursel...

I just heard about this idea. I have all the dry mixed in a bowl and will chop the apples and mix the wet ingredients together in the morning while I wait for the coffee to be ready, pop it in the oven and go back to bed. I added 1/4 cup flax seeds, did walnuts *what I had* and added crans without soaking *like the chewiness* instead of the raisins. Look forward to breakfast tomorrow. Thanks for sharing! Am going to top it with French Vanilla greek yoghurt :)

Soooo....I tried this recipe but I made some adjustments to it.....instead of baking powder/soda(I don't use either for baking...irritates the stomach) ...I used yeast, I added 2 Tablespoon of flour.....I used maple syrup and honey for my sweetnener, I used 2 tablespoons of flaxseed meal instead of the egg....I used cardamom and coriander instead of cinnamon. Didn't have to soak the raisins because it got soft while waiting for the mixture to rise ( about 1/2 hour).....It was a hit with my 8 weeks to wellness class. Thanks for the idea....

Oh yes you need to whisk those eggs, before the milk, but thanks for sharing this yummy healthy recipe, so will the oven be the same temperature in a small toaster oven as in the bigger oven, i'd imagine not, so as I prefer to use my smaller oven, i'll bake at about 300 instead. Also i'm going to be using a huge can of peaches along with the juice, so i'll use no more than one-cup of milk instead of two, also in most everything i bake i add a tbls of chopped or dried basil, maybe instead of raisins use dried cranberries, enjoy!~!

I'm vegan as well so I make flax eggs or I use an egg replacer. I'm quite disabled and I have sort of given myself permission to purchase ersatz meat and eggs because making my own at home is just getting too difficult. But I still make flax eggs most of the time and I use soy milk. Almond milk doesn't do so well in baking something like this where you're almost making a custard. I only use soy milk anyway because there are four almonds in half a gallon of almond milk and very little nutrition. It's nice to see another vegan! :-)

Make it with Apple Juice, and grease the pan. Been making this for years...At Holiday time, I cut back to 2 or 3 tbls. of sugar, red apples only, and about a 1/2 stick of butter. I add a few cranberries, yellow raisins, chopped dates, pineapple, and serve in bowls with milk for Christmas Breakfast. I need to make two pan's. They eat it up really quick. if they want to, they put their own brown sugar on it in the bowl. I make mine looser because the oven method seems to cook out the moisture quicker than stove top cooking, and also the oats absorb liquid. This fills their bellies until the turkey is done.

ethel newberry. Well thank you for that info. Ethel. I was told not to drink soda of any kind. with sugar or artificial sweeteners. No juice of any kind. they all have high fructose corn syrup. No power ade or Gatorade. Too much sugar. Looks like my health care provider didn't know what he was talking about. That ticks me off as l enjoyed drinking apple juice. l'm going to check it out and if what you say is true l'm going to start drinking it again. l have a distinct feeling l'm going to be enjoying apple juice again. Motts is sold locally but l never heard of Kroger. But one's better than none. So l thank you again for your reply. Here l thought l was helping you and it ends up you helping me. ☺😋

Jackie Campbell: If you used a Doctor to tell you that, you need to know that Medical School does not teach Dietetic Sciences. That's where the Dietitian enters the scene, because they have completed a four year study of Dietetic Sciences, usually obtaining a Master's Degree to qualify him or her to head food programs in a hospital kitchen. I only graduated with the Bachelor Degree in Food Science. Some go on to pursue a PhD, ranking the title of Doctor, (Doctorate) in this arena, and as far as I know they work with the Physician for the health of the patient who is in need of special diets when they aren't able to have regular diets or deletion of certain food. Noted large Hospital's such as Mayo Clinic, etc, may employ both of these Degreed people. There may/could be over a dozen Dietitians, depending on how many departments the hospital has to offer; i.e, heart, stomach, blood pressure, etc,. Normally, the PhD will be running this department, but that mostly depends upon how much an institution is willing to pay for a "Title." It's mostly University Teaching Hospitals that will contract the highly titled people for the position.
And, just think, all this started over Apple Juice.
      Thanks, my friend. Peace.
