How to make Karaage, Egg Salad, and Tamagoyaki | Anime Food IRL

On this week's cook through of Koufuku Graffiti we'll be learning how to make Karaage (Japanese fried chicken), Egg Salad Sandos, and Tamagoyaki! Episode 2 of Koufuku Graffiti showed Ryou and Kirin celebrating the Sakura Festival with their Aunt! The girls also run into one of their school mates and Kirin gets jealous of Ryou's friends who get to constantly eat her homemade treats.

Karaage Ingredients:
2 pounds chicken thigh, boneless and skinless, cut into 2 inch pieces
2 tablespoons soy sauce
3 tablespoons cooking sake
1 teaspoon freshly grated ginger
2 cloves garlic, finely minced
Salt and ground white pepper, to taste
2 cups potato starch, plus more as needed, for dredging
Grapeseed oil or any neutral cooking oil, for brushing
Egg Salad Sando Ingredients
4 large eggs
Water, enough to cover eggs in the pot
Ice bath
1 stalk celery, peeled and small dice
1/4 cup Kewpie Mayo, plus more for spreading
1/4 teaspoon Japanese style mustard or Dijon mustard
Salt and black pepper to taste
2 slices of Milk Bread, crusts cut off
Tamagoyaki Ingredients:
For the instant dashi:
1 teaspoon Hondashi Powder
1 cup of water
For Tamagoyaki Mixture:
3 large eggs
1 teaspoon salt
3 tablespoons dashi
2 tablespoons mirin
1 teaspoon grapeseed oil or neutral oil, for brushing
Items Used:
Air Fryer, medium saute pan, silicone spatula, oil absorbing paper or paper towels, bento box

looks so yummy! Can I fry the chicken on pan instead?

Yes you can! I would use a small pot with tall walls and use 2-3 inches of oil (pure canola or pure peanut oil) to fry the chicken! You could even use a large sauté pan with curved walls if you want to shallow fry!
