  • In this video, I am showing how to make super juicy Karaage. Karaage is a Japanese style fried chicken, which is loved by everyone in Japan, especially in Bento.
    In my Channel, I show step by step of alternative but authentic Japanese home cooking, which can be made with the ingredients that are easily available outside of Japan.
    Ingredients for Super juicy Karaage:
    Brine solution:
    - Water 1 Cup
    - Salt 1 Tsp
    - Sugar 1 Tsp
    Karaage:
    - Chicken (best with thigh) 200-300 g
    - Soy sauce 1 Tbsp
    - Sake (or white wine) 1 Tbsp
    - Sugar 1 Tsp
    - Ginger 5-10 g
    - Garlic 1 clove
    - Starch 4-5 Tbsp

    The deboning demonstration was GREAT! It really is one of the clearest and best ones I have ever seen. Elegant is the word that comes to mind. And I always make broth from the bones. Chicken, beef, and pork--my freezer is a steady source of broth for soups, ramen, and rice.

    I came across your channel, because i bought a napa cabbage, and wanted a good recipe…..(last night during my insomnia) , I decided to look up on RUclips!
    I wake up this morning, I see a recipe for karage ( it looked so good I clicked on it) . And I finally learn how to debone chicken in the easiest, best instructed video . I have subscribed! And liked, and shared ! Thank you.
    Now I may have to learn to cook karage with my grand-daughter!

    That looks great. How to debone and that with the skin is valuable info. Thanks.
    However, you should use a lidded deep fryer there. I got one and it's a lot better than an open pot.

    I do have one question: what kind of frying oil do you use? I have learned some oils cause frying to “ burn the coating before cooking the meat well. Thank you, it looks and sounds delicious!

    Thank you for sharing) Interesting that you use only starch for frying. I would like to ask you about your knife. Is it from Japan or bought in Germany? Do you keep it sharp yourself or give to professional Werkstatt in Germany?

    Hi Taiji. Do you think karaage or tempura can be make in air fryer without any oil?

      I assume it won't have the same crispiness as the oil fried ones, but it won't hurt to try!

      I tried it but doesn't have same flavor or crispness. I missed my karaage lightly with oil before I air fried. We still liked it though

    I have a question or you: You seem to live in Germany or somewhere like that. Where do you get all the japanese ingredients? I can't find MIRIN, MISO paste, frozen UNAGI is almost impossible,... and so on. Fresh seafood is fairly simple, at least fish.

    Taiji isn't brinning great! I do it with all my poultry, pork loin and aometimes shrimp. It's really hard to have a dry piece of protein when you brine.
    I have a question totally off topic of kaarage, if I may? I am looking for japanese dinnerware but Im afraid of getting knockoffs and not knowing exactly what Im looking for, could you please do a video on Japanese tableware? Also, maybe you could suggest some shops in Japan that 1 speak enlish and 2 will ship to America?

    Why make the board slippery ? Peeling ginger is easier and safer with a spoon
