    Ingredients:
    - 500 grams Tori (ridge gourd), peeled and chopped
    - 3 Eggs
    - 2 Onions, finely chopped
    - 2 Tomatoes, finely chopped
    - 2 Green chilies, slit
    - 1 teaspoon Ginger-garlic paste
    - 1 teaspoon Cumin seeds
    - 1 teaspoon Mustard seeds
    - 1/2 teaspoon Turmeric powder
    - 1 teaspoon Red chili powder
    - 1 teaspoon Coriander powder
    - Salt to taste
    - 2 tablespoons Oil
    - Fresh coriander leaves, chopped (for garnish)
    Instructions:
    1. *Preparation:*
    - Peel and chop the tori into small pieces.
    - Finely chop the onions and tomatoes.
    - Slit the green chilies.
    2. *Cooking the Tori:*
    - Heat oil in a pan over medium heat.
    - Add cumin seeds and mustard seeds. Let them splutter.
    - Add the finely chopped onions and sauté until they turn golden brown.
    - Add the ginger-garlic paste and green chilies. Sauté for another minute.
    - Add the chopped tomatoes and cook until they turn soft and mushy.
    - Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
    - Add the chopped tori and mix to coat the pieces with the spices.
    - Cover and cook on low heat until the tori becomes soft and tender. Stir occasionally to prevent sticking.
    3. *Preparing the Eggs:*
    - In a separate bowl, beat the eggs with a pinch of salt.
    - Heat a small amount of oil in another pan and scramble the eggs until they are fully cooked.
    4. *Combining:*
    - Once the tori is cooked, add the scrambled eggs to the tori mixture.
    - Mix well and cook for another 2-3 minutes to allow the flavors to blend.
    5. *Garnishing:*
    - Garnish with freshly chopped coriander leaves.
    6. *Serving:*
    - Serve hot with chapati, paratha, or rice.
