    I am so so happy that you made a south Indian breakfast. Usually when people think of Indian food they always do something from North India. So seeing Dosa and sambhar was a treat

    INGREDIENTS + NOTES
    #1 Quick Chilaquiles 0:49
    Sauce:
    1 tbsp neutral oil
    1 small onion
    1/2 tsp red pepper flakes (or to taste!)
    ¼ tsp paprika
    ¼ tsp black pepper
    a dash of cumin and coriander
    1 ½ tsp sugar or maple syrup
    3 tbsp tomato purée
    1 tbsp flour
    ½ cup (125m) vegetable broth
    A few tbsp water, to adjust the consistency
    Tortillas:
    6-8 small corn tortillas
    ¼ cup (60ml) frying oil (for example sunflower)
    Vegan Eggs:
    40g glutinous rice flour/regular rice flour (¼ cup + 1 tbsp)
    60ml vegan cream, cuisine or milk (¼ cup)
    60ml soy yogurt, unsweetened (¼ cup)
    A pinch of salt
    1 tsp rice vinegar
    a pinch of kala namak for serving (optional)
    1 tbsp oil for the pan
    6 - 8 yellow/orange cherry tomato tips
    → Yields 6 - 8 fried eggs
    for serving: (use what you want here)
    vegan sour cream
    1 avocado
    1-2 handfuls of cilantro
    vegan cheese of choice
    fresh lime juice
    → serves 2
    #2 Japanese Breakfast 5:51
    Omelette:
    300g silken tofu (10,5oz)
    1/2 cup (125ml) water
    1 tbsp sugar
    1/2 cup (60g) chickpea flour
    2 tbsp (14g) rice flour
    1/3 tsp baking powder
    1 tsp nutritional yeast
    1/3 tsp salt
    1 tsp soy sauce
    1/8th tsp turmeric
    Oil for the pan
    optional: a pinch of kala namak, added right before serving
    → Yields about 6 omlette layers! I recommend doing 3 and 3 - so you have 2 rolls total

    Miso Soup:
    1-2 pieces of dried kombu or 1-2 nori sheets
    2 cups water (500ml)
    2 spring onions
    1 handful of mushrooms
    ½ block firm tofu (100g)
    1 carrot, cut into noodles
    1 tbsp miso paste
    1 tsp soy sauce
    1 tsp rice vinegar
    1-2 handfuls of spinach
    a sprinkle of sesame seeds for serving
    → serves 2
    #3 Overnight Focaccia 9:14
    1 cup lukewarm water (250ml)
    1 tbsp sugar or agave syrup
    1 tbsp olive oil to be added to the water
    1 1/4 teaspoons active dry yeast
    2 cups + 3 1/2 tbsp (240 g + 3 1/2 tbsp) white spelt flour or all-purpose flour or bread flour
    4 tbsp vital wheat gluten (sub with 4 tbsp extra flour)
    1 tsp salt
    1 tbsp of olive oil to be drizzled over the mixed batter
    1 tbsp of olive oil to grease your pan with
    1 tbsp of olive oil to be massaged into the dough once it has risen
    a generous sprinkle of coarse salt
    → BAKE for 25-27 Minutes in a preheated oven at 210C, forgot to mention!
    → yields 1 focaccia, baked in a 20cm square dish

    #4 Berry Rye Porridge 12:43
    ½ cup rye flour (60ml)
    1 cup (250ml) non dairy milk, added ¼ cup (60ml) at a time
    pinch of salt
    ½ tsp vanilla
    1 heaping tbsp cranberry compote
    if it gets too thick, add up to ¼ cup of water (60ml)
    optional: mix a handful of frozen berries
    for serving: green apple, vegan cream …
    → serves 1
    #5 Full English Breakfast 15:25

    4-8 pieces of toast
    Eggs from Monday
    fried tomatoes + fried mushrooms
    → serves 4

    #6 Dosa & Sambar 16:15
    Instant Dosa:
    1 cup rice flour (130g)
    ¼ cup semolina + 1 tbsp (45g + 1 tbsp)
    ⅓ tsp salt
    1 1/2 cups water (375ml)
    oil for frying
    → serves 2
    Sambar:
    ¾ cup toor dal, washed (or sub w yellow lentils, then no soaking is required)
    3 cloves of garlic
    ⅓ tsp turmeric powder
    2 cups water (500ml)
    1 onion
    1 inch piece of chili
    1 carrot
    1 handful of small potatoes (or 1 zucchini)
    4 medium sized tomatoes
    1 tbsp oil
    1 tbsp vegan butter
    1 tsp sambar powder
    1/2 tsp curry powder
    1/4 tsp ground coriander
    1 cup vegetable broth (250ml)
    1 tbsp tamarind paste
    2 tsp sugar
    fresh cilantro and sesame for serving
    → serves 4
    #7 Pastel de Nata 19:49
    1 cup soy cream /soy cuisine (250ml)
    ¾ cup non dairy milk (180ml)
    ¼ cup non dairy milk to mix the starch in (60ml)
    ⅓ cup (40g) cornstarch
    1 tbsp vegan butter
    4 tbsp powdered sugar
    1 tsp vanilla
    1-2 tsp orange zest
    1 pinch of turmeric
    1 pinch of salt
    vegan butter for greasing the pan
    1 sheet of puff pastry
    flour for the surface
    ½ tsp cinnamon for sprinkling on top
    more powdered sugar for the top
    → yields 12 pies

    I’m so glad you made chilaquiles!! They’re my favorite breakfast ever. I’ll give you the easiest recipe: put in a dry skillet three tomatoes ( or tomatillos), 1 green chili (or as spicy as you want), 1/4 onion and let it get a little grilled. When it’s done pour it in a blender with some water (you can also add some chicken or vegetable bouillon in this step), put it in a pot and let boil for 3-5 minutes and the sauce is done! You can submerge the tortillas and make them soft or put the sauce over them so they’re crunchy. For the sides: crema and cheese, and it normally comes with protein (chicken,eggs or beef) but everyone eats it with black beans also which can be the vegan protein 🌱

    wow those all look so amazing! one thing i do have to mention (as a mexican) is that salsa is never made with tomato paste, always with fresh red or green tomatoes that are either broiled and then blended or blended raw and then cooked in a saucepan. but anyways it was nice to see chilaquiles:)

      Additionally, no flour is added to the sauce. Cumin, sugar, and the other spices are not used either. The "Enchiladas" would be way better with an authentic sauce that contains fresh ingredients. I do appreciate her trying much respect for that, but it does impact the flavor. These tweaks provide a more elevated and pleasant experience with the dish.

    I love this take. I’m Mexican and the recipe for the chilaquiles was not very accurate, for the sauce I recommend boiling two tomatoes and one chile Serrano it’s a small green chile. And then you blend this with a small piece of garlic and add salt to taste. Then you fry this sauce. This is how my grandma makes it I think it would taste more authentic this way! No hate at all I love that you included so many different recipes and made them all vegan

      Chilaquiles are quite vegan on their original version. Just take away meat an cheese.

    Ich finde diese Serie echt nice, in der du verschiedene internationale Küchen ausprobierst, aber ich wollte fragen, ob du auch mal ein Gegenprogramm machen könntest: Typisch deutsche Küche veganisiert! Gerne auch Kuchen! Ich weiß, das klingt nicht so interessant, aber ich habe das Gefühl, dass man deutsche Klassiker in vegan online nicht so viel findet, weil die vegane community in Deutschland eben doch nicht so groß ist und viel andere Küchen bevorzugt werden. Und während ich Indisch, Mexikanisch oder Italienisch absolut liebe, braucht man gelegentlich doch mal traditionelles comfort food oder Kindheitsklassiker. Solche Sachen wie Semmelknödel, deutsche Pfannkuchen, Germknödel, Kohlrouladen, Rosinenstuten oder Frankfurter Kranz! (Ja, man sieht einen Trend hier, ich liebe Süßes und vor allem gebackenes. Aber Sauerbraten vegan zu machen ist ja auch schwierig.) Ich fände das wirklich gut!

    I've been trying to experiment and make a vegan pasteis de nata for a while now, the hardest part being imitating the sweet egg yolk flavor that they have ...but i never thought to just use a vanilla custard! I'll definitely try that sometime :)

    well since you’re from Germany anyways I figured maybe to recommend a breakfast from a area ✨ . for example :
    -Bavaria : white sausages with pretzels and sweet mustard
    -Swabia: „Flachswickel“ ( cute baked goods made out of yeast that look like small keys)
    or very typical: dark bread (like rye bread / pumpernickel, maybe homemade?) with some butter and jam or (vegan) ham 👍🏻

    Canadian breakfast poutine - home fries, topped with cheese (cheese curds), and topped with hollandaise sauce. That is the base of it, and you can add things like meats, veggies (peppers) etc and baked maple syrup beans 😋

    Nice that you had a recipe from Finland! :) funny that in Germany there are no ryeflakes in stores - we have them and rye bread everywhere! Frozen lingonberries have a strong, soury taste, they are a true superfood from the Finnish forest. Greetings from Finland! :)

    for the dosa: you ususally cook it on 1 side only, and the surface should be quite thin, hence explaining why your dosa turned out thicker, and a lil burnt but i love the efforts!! 🥰

    All those breakfasts looked yummy! The “egg” was adorable!! Compote is pronounced comp-oat. Having lived in Spain I always smile when someone struggles with a pronunciation because of all the times I slaughtered Spanish either in pronunciation or using a similar sounding but wrong word. My neighbors had a lot of laughs over some of my blunders(such as saying “so much grapes” instead of “so much rain” during the end of a 9 year drought). Thanks for some inspiration as I’ve been in a rut lately with my meals.

    Glad you included a finnish breakfast :) in a truely finnish manner it would be cooked in water, with a pinch of salt and fresh or frozen lingonberries (=preiselbeeren; not entirely the same as cranberries, but very close), then served with a knob of (vegan) butter. No sweetness added and actually not a very sweet breakfast. But I love it. Since I'm not a native I dare to top my rye porridge with maple sirup, apples and some nuts and seeds, but only when no one is looking :D finns can be very specific about their beloved puuro :D

    Such a beautiful delicious collection of recipes around the world, just a suggestion if you would like to try variation in sambhar you made, next time when you make try adding pumpkin instead of zucchini it does make a whole lot of difference in flavor, its sweet tangy and spicy, one more option is making radish sambhar wherein you add sliced carrots n radish and diced onions both the variations of sambhar are best, pumpkin sambhar goes well for breakfast like dosa/idli/medhu vada(fried spicy lentil based donut) and radish sambhar goes very well with rice

    I would love to see your take on South African foods! Mielie pap (it's like a corn porridge) is really easy to make vegan and serve with some kind vegan stew. There's also bobotie which is 100% animal products so that might be challenging, or melktert which is like a milk pie and is SO good.

    You should try ginataang bilo bilo or turon from the Philippines 🇵🇭! Ginataang bilo bilo is a sweet coconut cream based dessert type porridge (?) that is usually cooked with mini tapioca pearls, sweet potatoes, plantains, jackfruit, and most importantly glutinous rice balls. The glutinous rice balls are actually really simple to make since you just have to mix glutinous rice flour and water until is makes a dough then form it into small balls. Turon is basically a sweet eggroll. Turon is a plantain and jackfruit filled eggroll wrapper that is rolled in brown sugar before it is fried and turns a golden brown. Both of these desserts are super good and are usually vegan. Btw I love you and your channel so much and I hope you get the chance to make one of these desserts ☺

    hi! i’m italian and i can guarantee that is a thing focaccia in cappuccino 😊 my grandma used even to dip olive focaccia or rosemary and chili focaccia in coffee! it’s actually good 🥳

      @@Sara00563 si sa che in italia la colazione classica è praticamene sempre cornetto e cappuccino, ma ogni regione ha la sua specialità. In liguria, specialmente a Genova, si mangia la focaccia pucciata nel cappuccino e ne andiamo fieri ;)

      @@Sara00563 io ora vivo in campagna in provincia di bologna e al bar mia nonna prende caffè d’orzo, latte di soia e focaccia da inzuppare. a casa l’unica colazione è yogurt, cereali e caffè. io personalmente non ho mai mangiato il cornetto a colazione 👀 solo fette biscottate

      Capito capito, sì dicevo cornetto e cappuccino perché è quello che si prende al bar, ma anche io a casa mangio caffellatte e pane e marmellata. Però giuro che la focaccia mi era nuova! L'idea del salato inzuppato nel latte mi sdubbia 😅 ma magari proverò!

    I love your videos but whenever I see the Portuguese flag on a breakfast video I get immediately scared I'll see someone make something way off like Gordon Ramsay did a few months back but you really hit the nail on the head with the pastéis de nata because it's very traditional to have one covered in cinnamon alongside an espresso for breakfast!     I loved this video! You should definitely do another! For an American breakfast, you could do a vegan Grand Slam or maybe try making a vegan McGriddle.

    Omg the eggs! I'm a vegetarian and I believe the thing I'd miss the most as a vegan would be eggs.. These tomato-eggs are genius but kinda sad at the same time! 🥺 But lookwise they indeed are a perfect copy of an egg!

      You should try Kala Namak. It's a salt that tastes exactly like eggs would. And there are so many vegetables with lots of protein 😉 maybe you get motivated and join Veganuary2022 to see if you're going to miss eggs after 31 days.

      I am vegan and my eggs are way more eggy than with just a tomato on top. For the yolk you could instead mix pumpkin, kala namak, oil, pepper etc. in a blender and then fry. Elsa's Wholesome Life has a great recipe video. :)

    You should definitely try Russian breakfasts like syrniki (you can use vegan cream cheese instead of quark) or blini!
    I think my favourite "Russian" breakfast is Alaaji from Yakutia which are shallow-fried pancakes ))

    I loved this video! I give you some ideas from Spain in case you want to try them.
    Tomato toast. Tostadas con tomate, aceite y sal. This is the most typical breakfast.
    Tortilla de patatas: Spanish omelette. If you want to make it vegan we do it with chickpea flour! (: this is a tapa too.
    Churros con chocolate. One of the classic for the weekend and it's accidentally vegan!
    Lunch or dinners: we have a very common vegan cold soup: gazpacho. I love it!
    Berenjenas rebozadas con miel: aubergines with honey or agave sirope!
    This is a very common tapa: dátiles con tocino: dates with bacon!
    Lentils soup: lentejas. They usually are made with chorizo but we also make them just with veggies: carrot, leek, potato, garlic, papikra powder, black pepper and, of course, brown lentils! This is perfect for winter!
    For dessert you can try Pan de Calatrava, Paparajote (we use lemon leaves but just to give the shape and a bit of flavour but don't eat the leaf, please)!
    Almond biscuits.
    Rollos de naranja: which is like an orange doughnuts ish thing.
    Zarangollo: courgette, onion, eggs and potatoes, it is pretty easy and tasty, put it in a pan with oil olive and salt!

    we tend to add tofu in our miso soup with green onions! there's a lot of tofu recipes in japan that we eat for breakfast :)

    For a sri lankan breakfast you can try making kiribath! It's already vegan, I actually ate it today because it's traditional to eat it on new year's day. You serve it with some salty condiments for example lunu miris or seeni sambol, and something sweet like jaggery. But as a kid I just ate it on it's own it's so good

    Very happy you included pasteis de nata. They are actually very popular as a breakfast food in cafes, along with an espresso. The only thing I would say is that vanilla is absolutely not a flavour that is present in Portuguese patisserie. We usually use lemon (peel or zest) as a flavour enhancer in Portugal (and I think in Spain too)... An alternative you might try for a next time might be an oat based cream sauce, cooked with a lemon peel and a stick of cinnamon... I think the creaminess of oat might work really well. Thanks for featuring our small (and naughty) breakfast 😉

      Also, yes, a little extra salt is perfect. My favourite patisserie adds a little more salt than others, and it makes them extra delicious... but they are a difficult pastry to make, and making them vegan (and there are very good vegan pastéis de nata in Lisbon) is an art in itself.

    If you ever consider doing this video again, i can surely recommend you to try Reunion island's "riz chauffé", or "warm rice" (basically a creole version of a fried rice). I usually use leftover rice, sauté-d with onions, garlic, green onions, turmeric, soy sauce and salt. You can add the proteins or greens of your choice : scrambled tofu, chopped smoked tofu, peas, kale, etc ... :)

    You should do a variation on plov, it is an Uzbek/central Asian dish that consists of a base of rice mixed with veg and traditionally meat and it is always served alongside green tea, or in Russian 'zelyoni chai' which apparently makes it easier to digest? It is also served with lepyoshka which is the traditional Uzbek bread, and you're supposed to rip the bread with your hands instead of cutting it. There are a lot of variations on the plov and lepyoshka depending on which part of Central Asia you go to, and this meal is served at pretty much every occasion.
