To Make Croquets (The Virginia Housewife, Mary Randolph, 1824) 3 Chicken breasts, chopped & pounded fine until it resembles ground meat A few pieces of ham or bacon, chopped fine as above. Use more or less depending on your taste preferences 1 cup of bread crumbs + 2 cups for the breading 0.5 teaspoons of nutmeg 1 tablespoon of mustard 1 tablespoon of mushroom catsup OR worcestershire sauce 2 tablespoons of softened butter Salt & pepper to taste 6 egg yolks, whisked Lard for frying Combine the ground chicken and pork with 1 cup of bread crumbs, nutmeg, mustard, catsup, butter, salt & pepper. Mix up well till blended. Take a small chunk of the chicken mixture and roll it in egg yolks and bread crumbs, flattening it a bit in the bread crumbs. Fry in hot lard until golden on each side. These do not take long to cook so watch them closely.
Sounds very French. Like chicken, Cordon Bleu. (Crow kett ) croquettes were popular because they could be stuffed! Mmmm good! ❤❤❤ Justine your a National Treasure 💕💕💕 God Bless Justine and Ron
This past weekend we lost power for about 9 hours. At the time of power loss, I was making bread dough and yogurt. I didn’t want to throw them out so after hubs got a fire started in the fireplace, I went to work. I took the yogurt out of my instant pot and put it near the fireplace to continue fermenting. I did the same with the dough. During its last rise, I put my Dutch oven into some of the coals to heat up, then put my dough in it to bake just like you do, Justine! Both turned out perfectly!

You've never looked so beautiful and glowing Justine! Being an expectant Mom surely agrees with you! Wishing you well! Thanks for all the awesome recipes that you prepare and share!
Mmm. Growing up, my mom made salmon patties with creamed potatoes (to cover the patties) and peas to put on top of that. I do without the peas, but, salmon patties with creamed potatoes all over it, yum. I've made this at times for my family too.
Now that we are experiencing a cold winter, Justine's recipes are so wonderful to have on a cold and dreary day. They will not only warm you up but they are such good " comfort foods". 😋
Being in Texas during 2 back to back arctic freezes makes me especially thankful for how people had to live without running water! We need to toughen up and soon. 🙌🏻🙏🏼❤
I was born in Canada but my parents immigrated there and so I went to a French school and learned about their history. In the history books I remember seeing pictures of how people used to live back then and it made me somehow feel homesick looking at those pictures even though I’ve never been there or even if I was I wouldn’t necessarily belong there but your videos although it’s American it’s quite similar and it makes me feel like I was there even if just for a little while. Thank you so much❤ I hope you continue for a long time
Judy (my wife) commented that your outdoor (initial) shot looked just like up at the farm in northern Missouri with the snow. And then add your wood burning, OMG that has got to be a WONDERFUL aroma.
You are so cute I’m so excited for you both in anticipation of the arrival of your little one, looking forward to hearing what the gender of the baby is! Love watching you cook you make it look so easy and yummy! Thank you 😊
These look delicious! I might have to try them myself! It's so sweet to watch you munching and holding your tummy.... such a mama already....praying for a happy, easy pregnancy for you!
I love your channel. Congrats on expecting! I am so excited for the next generations to know about the treasured recipes from the past. I appreciate your channel with the research and will definitely try a lot of your recipes. Thanks again :)
I make Salmon Croquettes in very much the same way except without chopping (I use can salmon). Now I have to try the chicken croquets! Thank you for posting.
Happy to see the mushroom catsup is back in rotation. I have made 3 batches so far, and dried out the solids to make a mushroom powder. So yummy, I am never going to buy worcestershire sauce again.
My mouth is watering! So happy for you and Ron, praying that you have a wonderful, healthy pregnancy! What a blessing! It sure does look good on you Justine!🙏❤️⛄️❄️
My favorite channel. So interesting. Justine seems to be especially beautiful lately. I think being pregnant has added a glow to her complexion. God Bless you and Ron🙏🙏🙏
Those croquets look delicious! My husband and I are predicting how many Justine gets to eat herself vs Ron. I say Justine will have 2, my honey says 1 for Justine. We both think Ron will eat the rest. 😂
These look delicious! There would be so many ways to vary these with onions, peppers, rosemary taco seasoning, ranch seasoning, whatever suits your fancy. Then as we do nuggets today with all the dipping sauces, it would be easy to eat these often.
Gosh im early I love this channel so much, I just wonder if maybe there are any swedish recipes that you could try because of the mass immigration of the 1800s. Swedish people came to America and I dont know super much about it. I have a relative who made some books about this but im just wondering if they brought any kind of recipes that are used in America even today that would be interesting to see. Like saffron buns, blood pudding, aspic and so on. Just a thought but I love you guys❤️

I'm very glad to see how things were made long before they were put in bags today.(Thanks so much sweetheart,It looks fantastic.see you in another video, I hope.).♥️♥️🙏👋
I was just thinking of you and then here you are. Good to see your video this week. You look absolutely lovely and definitely glowing today. Pregnancy suits you. As always, thank you for taking the time to create and share your videos with us. It's much appreciated. I wanted to share with you what I was thinking about when I was thinking of you. You should write your own cookbook with Ron as your food photographer. Do your favorite recipes from all the famous people of your favorite time, but do it in today's cooking devices, time, temp & measurements on one page and then have the original on the opposite page. Of course if it's a small recipe you could just show an insert of a picture of the original recipe like you do when you show it in here. Girl, I've got all kinds of ideas. I would definitely buy your cookbook if it taught me how to do it in/on my conventional stove. I think you could do several series too. You've got all the footage in your past videos to do it in no time at all. Just saying, I think it could help with your household expenses and help get your house finished faster. You should definitely think about it. Praying for you, Ron and the little one. Love y'all bunches! ♥️
Looks like salmon croquettes to me. Have them all the time in the south. You can make them with tuna and apparently chicken. Mama called them salmon patties, but the original name was a croquette or patty of meat mixed with egg and binders then fried. Yummy for sure.
A good tip when making these is only use one hand for coating the patty in the egg and only the other hand for coating in the crumbs. That way your fingers don't develop e thick layer of batter and you can do the whole batch in one go without having to periodically clean your hands. Looking real tasty!
Delicious! I remember making chicken croquettes with my grandmother. I'm going to look in her recipe book to see if it's similar to your receipt, Justine.
There is nothing as satisfactory as tasting something from a good recipe - and wanting another taste! I know this from experience, and so did my mom. I remember my mom used to make chicken croquettes with a light colored gravy. They were good! Nowadays, I would put out mustard or a mayonnaise sauce to dip them in.
We have learned something new from this episode! These chicken nuggets look good! We wished we could have some! We missed the live have been busy.Rebecca and David Back.
What an awesome dish! I think that Croquets would sell today, even if it is slightly modified with using oil instead of butter. Well done, thanks for sharing!
They look so delicious. Nice to have it on a bun with onion, tomato, lettuce. This food make me so hungry as I can smell the odour across the other side of the world. ❤❤❤😊
Hi, I watched your other channel with Ron eating these and because you liked the receipt I jumped to this channel to see how you made them. I have been making and eating them for years. Try a fish (salmon) croquet too. Yum! ❤️
Sure looks good! I think I’ll try this. I’ll make one or two big ones and have a nugget sandwich too! Kids are such a blessing!im from a family of eleven kids. I have a daughter and four grandkids. Also two great grandkids. So I’ve been around kids my whole life and I’ve had a blast because of it! They are so much fun and a lot of work and worry, but worth every second! I wish you the best with yours!
I was so happy to see you washing your hands after handling the raw chicken! I was a Peds and Mother/Baby nurse for many years, you'll forgive me if the nurse in me comes out, especially since you're expecting!
I have been subscribed to and watching your videos way back when you were doing skits at the Stephenson House. I look forward to each one, and I occasionally am tempted to try one of your recipes. However, I'm thinking this one is not one of those - I just can't get past the chicken goo at the beginning. Also, we haven't heard the rooster recently - coincidence you cooked chicken? Anyway, looking forward to next video - thank you for keeping these old recipes alive (even this one, lol). 🥰
Those look really good. Its always fun to see your eyes light up when you get to eat something that tastes wonderful. I know that's not always the case. And not a caraway seed in sight....
Wonderful recipe, and I imagine the different dipping sauces that would go great with those Nuggets is limitless.. Great job Chef Justine! And a side note, my Mother sure would have appreciated having that colossal Wooden Spoon when she was raising me and my 3 brothers... We weren't afraid of being spanked with the little ones she had... That Big Spoon would have put the fear of God into us.
Didn't realize croquets have been around that long. i wonder if these would be good frozen? Make a big batch then throw them in the lard as needed. They do look delicious.
I want to do something like this to make my own chicken patties for sandwiches. The store bought ones have gotten so bad over the years. Its been awhile since I've had a good chicken sandwich.

I'm not a fan of nutmeg. Do you think if I left it out it would make a big difference in the taste?
Thank you for posting the recipe. Much appreciated .
Love your videos.

Thanks for all the awesome recipes that you prepare and share!
I just love your videos, I find them very calming
Delicious!!! This reminded me that I can mince chicken breasts. Trying this recipe this weekend. Praying for good health and energy for you Justine.
They remind me of the Salmon patties my grandmother made when I was a kid. We would have them with fried potatoes and creamed corn.
Salmon patties is what I think
they look like. They look good.
Yumm!! Sounds delicious!

Those are the best chicken nuggets I have ever seen! Definitely a 10 out of 10 for me.
They were amazing! This one is a keeper for any historical cooking enthusiasts out there.
This is my go to channel when I need to relax after a stressful day
The way you scooped up the plate at the end made me giggle 😀. These look amazing! Eagerly awaiting the arrival of Little One. ❤

I'm learning a lot of great recipes from your channel, and what a coincidence I just had chicken nuggets and waffle fries.😊
It's Fried! Ron will love it!

These look absolutely delicious, Justine! You and Ron are going to be eating good today! 😋 Oh, what kind of dipping sauce was that you used? 😮
Probably some kind of ketchup. Mushroom ketchup was popular in the early 1800s.
@@baylorsailor I think it was mushroom catsup, yeah. They had some with them in the Chew & Chat.
