    Lemon Zucchini Bread
    2 cups cake flour or all purpose
    2 t. baking powder
    1/2 t. Salt
    2 eggs
    1/2 cup oil
    1 1/3 sugar
    1/2 cup buttermilk
    2 T. lemon juice
    zest of 1 lemon
    1 cup shredded Zucchini
    glaze
    1 cup powdered sugar
    2 T. heavy cream
    2 T. lemon juice
    recipe for cake flour
    take 1 cup of all purpose flour, take out 2 T. flour, replace with 2 T. cornstarch, mix, equals to 1 cup of cake flour

    I keep 3 to 4 lemons in a jar of water in the refrigerator fill the jar completely with water, they keep for weeks and weeks and I always have a lemon when I need it. I was throwing shriveled up lemons away. Thank you Ms.Lori for this recipe. No garden this year.

    I quartered a zucchini, chopped into pieces, added one jar of Prego (Farmers Market) marinara. Added garlic powder, slice up polish sausage - drop in with sauce and zucchini. Cook until zucchini is tender. Serve with garlic bread. It was good.

      This is one of those things that came together as the "light" (our wonderful LORD) came on in my head. We all get stuck, and he gives us what he knows we will like. I had thought about putting it on spaghetti, but I knew I didn't want two starches. Spaghetti and bread.

    I will be trying this recipe. My garden has not faired well. Prior to gardening season, I found out I have a heart condition. I'm doing the best possible with the current difficulty. No other person to help. I know God has all things in His loving hands. So, I trust Him and still try to get things accomplished. God bless you and yours. Thank you for your videos.

      I was planning a garden too but also ended up hospitalized with a heart condition last fall,l was unaware of until it decided to kick my butt,lm better but not able to work a garden with no help,and l dont tolerate the heat well,l was so disappointed,l just try to buy from gardeners that have some extra to sell.Theres nothing like home grown food. Take care !😊

    Our garden here in North Texas was really good. We're in a 100 degree cycle right now so I'm sure it's near to done. Had a tun of potatoes so decided to can some first time. My arthritis in my hand was bad so was having trouble peeling. Then I had a wonderful idea and used my apple peeler to take off 80%. I'll sure be using that again. Love you sister Lori

      A couple of years ago, I bought a peeler that slides on my middle finger. It works great when I peel cucumbers, apples etc. Maybe that would help you also.❤

    Mrs Lori you would be so proud of me I've canned okra and tomatoes,spegettie sauce , tomatoes pressure canned all that.i cheated I bought one of those nesco electric canners,lol made tomato past and pizza sauce all in last 3 days .I grew all my ingredients except garlic.❤🙏

    I made your lemon zuchhini bread, but made it into muffins. My husband and I loved it. I made another batch making 1 change. I added 1/3 cup more zuchini and made it into muffins and entered it in the county fair and won 2nd place, a red ribbon. Thank you for the recipe.

    I put my shredded zucchini in large plastic freezer containers. My bread recipe calls for 2 cups then I put one cup oil that it calls for in with it then freeze. Helps keep it from drying out and getting stringey.

    We had a drought here in Oklahoma too but my garden did well up to July. I canned a few tomatoes and green beans and put some crowder peas in the freezer. We love zucchini bread. Can’t wait to try this!!

    I made wilted cucumber salad (onion, garlic, vinegar, sugar) with zucchini instead of cucumbers. It's great on a hot day! Also if you have an abundance, it dehydrates really fast.

    This is delicious! I doubled the recipe and shared it with my neighbor who had quite a few out of town guests. I also served it to my grandchildren, who sometimes can be picky eaters. Everyone loved it. Very moist and lemony - the blueberries added an extra deliciousness!

    I adore your mixing bowls, Lori! Zucchini is so versatile. I use it equally in sweet baked goods and in savory dishes. I bet leftovers of this bread would make delicious french toast.

    Yum I’m going to try this! The bugs got to my zucchini plant but I picked a huge zucchini at the farm up the road. It was so huge I got 8 cups of shredded zucchini from it! My tomatoes didn’t do well but I picked a bunch at the farm and put up 21 pint jars. We’re sure going to enjoy them this winter!

    I’m going to try this as soon as possible!!! We love lemon, and zucchini, so this is perfect! I did want to mention, since you kindly gave the formula to make it… if you don’t have cake flour, since the recipe calls for 2 cups, you can use 1 3/4 cups ap flour and 1/4 cup corn starch. ☺️🙏❤️

    Oh Miss Lori, thank you so much for this recipe! My zucchini plants have been producing like crazy and even though I share with family and friends, I still manage to have lots left over; this has been an exceptionally good year for my garden! I was going to make zucchini bread for Mr. Man but wanted something other than the usual cinnamon/nut recipe and had heard of lemon zucchini bread and here you up and do a video on it... what a refreshing change! I never thought about freezing shredded zucchini either so thank you for solving another problem for me. My Blue Lake green beans are busting out too and would appreciate any tips on preserving them; is freezing or canning best? I do vacuum pack and freeze a lot.     Here in Central Florida, we’ve had such hot weather! The heat index every day is 115F or more, so my garden goodies are all fried on the vine! But I do have 5 pounds of Zucchini that I’m working thru,so this recipe will be moving up to the top of the list, probably for tomorrow!
    Thank you for being you, Miss Lori. I appreciate you more than you know. You and Heather, the Kneady Homesteader, are the main ones that have given me the courage to not only start canning for the first time in my life (and I’m 73!), but you in particular, gave me the nerve to start a real garden. For the first time in my life, I actually planted something and actually got it to live more than a week!! Collards we’re awesome and got more than a few tomatoes before this awful heat set in. But that’s ok, I’ll try again and next time, will plant more veggies. I’m hoping to get some butter beans so I can do your yummy-looking succotash! I know you’ll continue being a blessing to all of us, and I send you love and pray for your, and Mr Brown’s, good health!

    Lots of canning with tomatoes, juice, salsa, and taco sauce. Green beans too. Freezing okra and zucchini and squash.     Great recipe! I made this recipe into muffins this morning with the frozen zucchini I had in the freezer. I used Miss Lori’s recipe for the cake flour as well… turned out so good! Fresh pot of coffee brewing and me and the man are gonna enjoy a few muffins for a treat after some yard work. Thank you!

    Mrs. Lori, you do what I do. I taste all my batter and bread dough. I do it for 2 reasons. First, I like the taste of it and always have. Second, my taste buds know when I need something else added or I missed an ingredient.

    My grandfather’s garden had so much zucchini we couldn’t keep up. I was a model in my teens and 20s, and ate sparsely. My grandmother, always cognizant of vitamins and nutrients, would take the larger zucchini and slice them about 1” thick and place them round-side down in a fry pan with about 1/4” of water. She’d take a fork and pierce the zucchine a few times. She’d place a dollop of pasta sauce on each round and bring the water to simmer. After the zucchini was cooked through, she sprinkle parmesan cheese on top of each zucchini round and place the pan under the broiler for a couple of minutes until the cheese was toasted. It was delicious, low-fat, low-cal, low-carb and very filling after eating the equivalent of part of a large zucchini.

    I made this today. My first zucchini bread and it is amazing!! I didn't even put the icing on. I will be making again. I used small loaf pans and It did take 55 minutes for my loaves to bake. Thank you so much for this delicious recipe ❤❤. I have made 2 other zucchini items, fritters and brownies and both turned out bad, this recipe was for dummies for sure😊

    We are getting a lot of zucchini and squash our potatoes are doing so good to.
    I’ve put up 20 quart bags of cubed and shredded zucchini 16 pints of potatoes 9 quarts of potatoes so far. 😊 Tomatoes are slowly turning this summer.

    I have had a hard time this year with my garden. It has been so hot in Texas. Even though it's in the shade most of the day it didn't do well. Most days. Have been between 101-105. Then heat index up to 110. It has just burnt it up. But, I am blessed. Still have plenty of canned food on shelves.

    My zucchini is just starting to get blossoms. I can’t wait!
    Or favorite is stewed zucchini, a jar of tomatoes, sliced zucchini, lots of herbs, mushrooms if you like, and if you have a parmigiana or Romano cheese rind to throw in, just throw it all together and cook it up, it’s delicious. Put it over pasta for a nice summer meal.

    I was so excited to hear you say larapin I almost cried. I may yet. I have no idea how to spell it but my dad used to say it all the time. We were from Tennessee and had to move to Illinois in 1949 so my day could find work. I’ve never heard anyone else say this word except I say it and people look at me like I’m crazy. Hod bless you and Mr Brown. I love you both with Jesus love. If you know how to spell this word I’d really appreciate it if you’d tell me. My dad has been dead since 1972. I was a young girl then and now I’m an old lady in my late 70’s. I miss him every day.

      The great thing is you don't even have to be a "baker"! I'm not either. I literally don't have a real oven, just a toaster oven, and I made this zucchini bread with some zucchinis I was given by a neighbor. It's terrific!

    My name is Wilma Smith this is my husbands page we watch your videos and love them especially your little house and lifestyle. We are planning on selling our house in the near future and downsizing. We're both retired now and live in SE Tennessee.     I should add, a love of family & good homemade food, prepared straight from the heart, is always great to see.
    Also, the self sustainable life is the way to go, albeit, I'd encourage people to first get their soil tested. Just incase, any toxins had previously leached into the soil.

    Looks great! We are burning up here, so no garden. We are going on 15 days straight at over 100* weather. Not a bit of relief in site either. Glad you are feeling ok now.     I made lemon zucchini bread last week and it was delicious!! A nice twist on zucchini bread. We were getting burnt out on the classic zucchini bread.
