They sell them in almost every convenience store and gas station with a deep fryer, and even in the deli at Safeway. There's also a fantastic food cart in Portland of the same name that specializes in making this regional specialty.

Hi Natasha and Seth 🖐 excellent how-to hotsauce video . I'm not one for the hot stuff, but a good mild sauce will be on the list next year. I use more honey garlic and homemade bbq sauce on my eggs and meat dishes. . Peach update the Peach crisp is#1 Peach banana bread will be the next thing I'm trying but I did have a few batches of blueberry banana bread that was outstanding 😋 the neighbors all want seconds. If they have started to turn colors already they will finish ripening inside most of the time without issue! If they are all green they won't ripen inside. I'm going to film the jalapeno sauce video today! 🙌

sorry im late watching this. anyways is it important to keep the different kinds of peppers separated or can you combine different peppers together. I have habaneros, serranoes, and cayenne? I will keep all the green serranoes separated to make a green hot sauce. i did separate the peppers to ferment and sorry i didn't wait until the later part of the video to ask my questions. thank you so much
You can absolutely combine peppers! I like to separate some to taste and combine others to keep it interesting! 🩷 Mix peppers with different heats will provide a unique hot sauce which could be hard to predict the heat level off but if you like spicy things it won't matter!
I made your hot sauce. And oh my gosh, is it ever hot! I did add a bit to much of the liquid back in so it is kind of runny, but that is operator error. lol! Is there a way to thicken it a bit without ruining it? And would adding a sweetener dial down the heat a bit? My son absolutely loved it even as he was coughing he gave it a thumbs up.
If you add too much liquid you can always cook it down until it is the consistency that you would like! (Be sure to do so outside or in a well ventilated area!) Adding sweeter tones the spice down a little bit! The longer you let the peppers sit the vinegar the lower the spice will be, so a hotter sauce might only sit for a month while a milder sauce may sit for 3 or 4 months before processing! But I've very glad to hear your son likes it!!

I am reusing a hot sauce bottle that I washed. Do you sterilize the bottles before adding the hot sauce?
I typically run them through the dishwasher for sterilization before reusing!
