- Extreme budget cooking is still possible in 2022 - and one dollar can still buy you dinner! Aldi is still a clear winner when it comes to beating inflation and saving money on food costs. Inspired by a video from Homestead Tessie, I created this frugal meal challenge to spend no more than $20 at Aldi and then create a menu plan to feed my family of four dinner for an entire week. The twist is: no ingredient could cost more than $1.00. Head to Aldi with me and my 18 year old son, Daniel, as we shop and plan meals for under $20.

This video is so adorable!!! Daniel has the best personality, sense of humor and public speaking skills. What an amazing and sharp dressed young man! Your 3 sons are impressive. Well done, Hope and Larry!
I echo this!❤️
Adorable! High carbs, low protein. This is a horrible diet!
@@mostlyirishkevin7928 what about all the beans!? Lol :-) its just meant to show how to stretch $20, not intended to be a sustainable diet im sure.
@@mostlyirishkevin7928 when people have little income or are very hungry they need to eat. I personally eat a very high carb low fat plant based diet and lost 40lbs. I am very healthy, way more healthy than most so this isnt a horrible diet. The adorable part is the family working together. This is a frugal channel and they are giving others ideas on how to eat in 2022 on $20. Have some grace!
@@NuggetFarm2011 I find it unbelievable that you lost 40lbs on a high carb diet. Carbs are sugar and unless you exercise a lot those carbs turn into fat.
Daniel is a natural! He’s got a great personality and laugh! I would have got him the pudding!!
100% I can't believe she said no to Daniel's pudding request!!!
Poor kid, I am sure he survived, but hard to say no to that face. ha ha .
He's the reason I kept watching - his reactions are so cute!!
Pretty sure they got it just not for the camera
Get the boy some pudding!
I agree
And coolwhip to mix with it. I think that's 99 cents at aldi and my kids love that
Lol
I’d rather give him a pounding…
Yes they had enough to go grab that
I love it when your sons join you!
Thanks. We have so much fun hanging out with them.
You can extend that avocado a little bit more by mixing it with a little bit of tomatoes and a vegan mayonnaise inside of a blender and you'll really fluff it up and then you could spread it over a lot more recipes than just slicing up the avocado
Daniel has a lot of charisma! He's great on camera. I love this type of video. Thanks guys!
Watching you interact with your son gives me hope that me and my 8 year old will still be close when he grows up ❤️
I love Daniel's hat. So fun when he shops with mom. And I bet Larry was running the camera. Good job everyone. Lorraine
You are right. When Daniel helps with food videos Larry does the camera work for us.
I love these frugal challenges! You made it extra hard on yourselves with the $1 or less per item requirement. Great job...keep 'em coming!
I would love to see the finished meals along with these type of videos. Your son is a great teacher just like yourself.
I agree
Me too!
Yes. I'm surprised we didn't see the meals. I'd like to see their black bean burgers. I'm not sure how they stay together without eggs.
I'm impressed! Great job!!! You and Daniel are a great team!
I tried with the Lipton brand onion mix putting it on chunk cut potatoes and roasting them. It was on their website. Really good and kind of comforting which would be nice during the winter months.
MSG?
I do this too!
Sandra Lee's cookbooks come in really handy when your trying to put things together. Her whole cookbooks are about using pantry items together. Kroger has bags of fruits and veggies on shelves in the fresh fruit and veggie part of the store. They are in red bags, I always look there first and make my meals around them.
By the way you can be very proud of your son …what a lovely young man😊
Try grabbing frozen vegetables at 1.00 a bag and canning it . This will give you 2 points of vegetables for 50. Cents a jar which is cheaper and more healthier for you than buying a cans from your store.
Me I buy the great big bags at Costco on my frozen vegetables at 8.00 a bag and end up getting 12 points of vegetables.
Only preservative that I add is a pinch of salt and hot water and pressure can them
Love how you both think outside of the box. Excellent job
The bread- there's your dessert- Bread pudding, the cheapest of cheap!
Another great video, thank you! I am so happy today, because I've spent less than 30 euros in the weekly shopping! After weeks trying It, I was able to do it! Thank you for the great tips, I always feel like you are cheering on us when we are able to cut on spending money🤗
First off I love all of your videos and I love the fact that you add your son to so many of them. He is an extra added bonus.
You did a great job!
Wow,the price for basic canned foods is high. I never noticed the price because I just use the bulk beans I have on hand.
When I was at a loss on what to make I always liked the simple 7 ( 7 ingredients or less) cookbook to get good basic recipes to do basic meal plans.
I recommend that you try to grow herbs. Plant them with your flowers, they also flower and blend in. I now have herbs in the house drying ready to use all winter long. Home grown herb tastes so much better and adds a more complex taste to basic dishes than store bought herbs.
Daniel did a great job!
I love this video. So many great ideas. Most of these kinds of video's all make the same ol stuff so I'm glad to see some different ideas. It would have been nice to see all the dishes you ended up or will end up making at the end of the video. Thanks for sharing great great video
“Ingenious” was my favourite adjective when I was 8. I haven’t used it since. How’d I leave such a great word behind? I’m bringing it out of retirement-thanks Daniel!
Thank you for Daniel taking the lead and being example among men! Guys! Men have to know what’s going on wit kitchen work!
Tell me your son is going into journalism...he was born for the camera! Love all your videos
He is a teaching assistant for 2nd-4th graders and is studying elementary education. He loves teaching so much!
Been teaching 2nd grade for 27 years. They are the cutest. They make me laugh and smile every day!
Never saw your son before. What a fine young man! You are blessed!🙂.
Daniel is such a natural in front of the camera. He is handsome and has a pleasant voice, and I love his sideburns!
Your son is so cute and, such a great helpper.
So get him the pudding 🙏
Great ideas, The sprouts I keep in my pantry would add the fresh element to many of these dishes.
I really love seeing your family be so close! ❤ that’s great to see
"Hi, I'm here, too" Ha! You all are the nicest, sweetest family.
Loved seeing Daniel. He has such a terrific smile. Every time the camera was on him I started smiling knowing you were under a grueling task.
RUclips suggested this video and I subscribed within the first few minutes of watching. Such an informative, fun video and I LOVE your personalities!
This is an amazing video and thank you so much for sharing! I’m going to say I’m team Daniel and he needs his dessert L O L. A box of pudding would’ve put you over for sure but it would’ve made Danielle happy I think! Being the fact that your family is vegan and not having to go out and pay the high prices for meat right now is a total blessing! My kids eat a main diet but I am vegetarian so my meals are a lot lower as well but I love the way that you’re doing this and showing that people can eat even a vegan lifestyle even if it’s only for a week it would save them a ton of money in the long run.
Your aldi checkout man packs your trolley ! In the uk they just Chuck it us at high speed 😂 . Great video your such a lovely family xx
Our ALDI has been here on the Gulf Coast for about 4 months and I absolutely love their prices, produce and vegetables. Love the sales specials. ❤️
They are our go-to store, Emerald.
@@larryware1 Glad u used Aldi
I Love your son's style, delivery and confidence!!!
I love and appreciate all the help from your videos. Your family is awesome. I especially love the food challenges with your kids. Thank you
Let Daniel buy the pudding! Great video!!!
i wish they would put an ALDI here in Tucson, AZ but the nearest one is over an hour away. American Discount Foods in Mesa, AZ is the same distance but much cheaper so I won't make that drive in my V8 truck for ALDI.
First, I am so jealous of your rain. Love this video. Thank you for bringing hope to so many.
You two are so cute! I love it!
Thanks for helping me save money 🙂
Holy crap Daniel is such a natural way to go guys !! I'm so happybi found your channel!
In a pinch I use a can of refried beans, add a drained can of store brand Rotel, and some cheese in a flour taco size tortilla. Did this last night. Might add some mexican rice and drained corn to stretch it further.
Y'all are vegan and that is not my dietary preference. I'm completely okay with having some meatless meals, and I don't don't eat a lot of meat at all, but definitely not interested in being vegetarian or vegan as a life plan. I believe the complete amino acids and complete protein in meat is important for me.
Looing forward to this video! I have never been to an Aldi- but with food costs soaring, the higher end grocery stores in my area are ridiculous in their cost. I tried Walmart last week- was ok, but the choices were limited in fresh and frozen produce...which wasn't great. Need inspiration- thanks to Hope and Larry for educating us.
Thank you, Donna. Hope this video helps.
Daniel, this was a challenge so no pudding this time. Maybe next time. 😄This video was fun to watch as well as informative. Thanks for sharing.

now, hope,I know you guys are vegan, but,if possible, get meat bones.boil it down with a bit of vinegar to make bone broth for pennies.high in collagen.
bone broth in stores is insanely expensive and loaded with all kinds of additives.
just a thought.
you can make a layered taco casserole with potatoes, too.
or frozen french fries.
I did that for Thursday night dinner.
💙💙 can't wait 🙂
I don't know if it was this video or another one, but I LOVE that you said a meal doesn't have to consist of five different items. We have one main dish and that's it. Sometimes it may be a baked potato or baked winter squash, but we don't have sides and appetizers and desserts. I can't understand protein, veg, bread, salad, dessert, all in one meal (unless it's a casserole that contains all or some of those ingredients).
Pinto beans or kidney beans with a sauteed minced fresh jalapeno (usually between .15-35 cents each), a pinch of sugar, onion powder, garlic or garlic powder, a Tbsp of tomato paste, and a tsp or two of chili powder or even cumin or coriander or curry powder or garam masala is a really good sub for chili beans.
Your son is so sweet to help you like that; you ought to figure a little splurge for him into the budget.
We adore garam masala!
Great video. Your son is just adorable! I'm wondering why you didn't purchase a bag of rice instead of paying $2 for 2 boxes of mixed rice when you are not going to use the other ingredients in the box?
The bags of rice were more than $1. So, they didn't fit into our challenge of paying $1 or less per ingredient.
Lovely video as always! I always love these grocery challenges. They always motivate me to challenge myself on our budget weekly. Daniel, maybe next time negotiate being paid in pudding for your contribution to the video 😂
Hi Hope and Daniel, you are both adorable but I was hoping to see the meals you created!
Daniel needs to be in the videos more, his very good at it like you!
Lol "hot." I don't think I know the meaning of that word anymore. (New Mexican).
These are great ideas!! As a vegan sometimes these $10-$20 challenges don't fit as well cause people rely so heavily on eggs, chorizo, hot dogs, or dairy.
I've saved those seasoning packets from the rice to make herb spiced bread and seasonings in soup. This was awesome 😊 bummer on the pudding 😂🍮 Definitely want to see more cooking from Daniel 😁
Great video! Love the interaction with Hope and Daniel.
This was fantastic you guys! You're both naturals at being innovative in the kitchen.
No Adli here. Being plant based your choices are pretty healthy too! Would love to see what you make with the items.
Were dry beans more expensive than the canned? Were frozen vegetables more expensive than the canned?
In our area of California, a pack of premade corn tortillas is less expensive than the boxed, and homemade even less expensive. We have an avocado tree, and you can freeze avocados. We use white beans for homemade white bean hummus.
Great questions. We could have gotten frozen green beans, corn, or peas for $.84 per 12 oz. bag. But, our $20 didn't go very far once we started buying and adding everything up. I think it would be super fun to do a challenge that had more fresh produce in it. And maybe more frozen, as well. The only reason we didn't go with dried beans is that they were more than $1 per package. Otherwise, they would definitely have been our choice instead of canned.
I love Aldi! So great for the budget. I like a pasta dish, with premium marinara sauce with grassfed beef or italian sausage. Then a nice side salad, garlic knots and a bottle of wine for 2.99. That can make 2-3 meals. Definitely under $20!
“Or I will find you!”
This is the respect all avocados deserve. I’m with ya!
If you have access to a commissary like my grandparents do, you might even be able to make that $20.00 stretch even further especially as a vegan/vegetarian.
I adore onion soup. It is so yummy and falvorful
Please do more of these videos…love them.
The pasta and beans is a classic Italian dish - pasta y fagioli. If you have a garden, you can add homegrown kale and make it a perfectly balanced meal.
There was a lot of great information but was disappointed not to see the actual meals.
This video is so helpful. Although I might not be able to purchase the same ingredients for the same exact price, it will still be beneficial in my journey of frugality. Thank you so much for sharing this.
Very good ideas!
You can use the avocado and make a dessert ;) Make a pudding/mousse out of it.
I really enjoy watching your sons in the videos.
The thing about videos like this is if you buy in bulk / larger containers of things, you are going to get more meals thus it's worth it to spend a little bit more. But i understand the $1 cap challenge and appreciate the effort trying to inspire families they CAN eat on a strict budget.
OMG! I love you two!!!!!
I would love to see more videos like this. These are so fun 😊
Great video and the ideas are very smart, thank you all for making these wonderful videos!!!
Plot Twist: In Australia it costs 3 times as much :-) On a serious note though, this is great - especially driving home the thought process of "think outside the box".
I was so interested in this but without step by step cooking instructions or a recipe to follow, I’m lost! Can you do a part two with step by step cooking instructions for each meals or link recipes? I’m a beginner in the kitchen but still try to save money for my family and I’m not skilled enough to just throw things together!
I am mesmerized by this channel.
I love that you have your son involved. What's up with the Inspector Gadget outfit? LMFAO
He has a distinct style and really enjoys dressing as a unique individual.
It's a great video. Never heard of White Bean Sauce. But If you Like it,it must be great. Gonna try That👍
Daniel did you get you're pudding ? 😉
Hope and Daniel you are a winning duo!!
Love to watch your videos. Love Homestead Tessie, too
Kidney beans for the chili mix.
Gosh your Aldi aisles are twice the size of ours in the UK! They are so small it gets really congested and stressful! Love US car parks too, the spaces are so much bigger 🤗
Great video love these ideas! I wish it would have shown the full execution of the dishes and your family enjoying the meals but I will definitely be taking some ideas from this.
Crashed tomatoes more than 1 dollars ? Ouch that is really expensive
Impressive spending budget! We change our diet and stay away from processed foods. So we spend $1500-1800 per month on food( including 1-2 takeout or dine out). Mid wings in my area is $8.99 per pound while beef short ribs is $14.99 per pound. Avocado ranges from $1.29 to $2.49 per one depends on different seasons.
That’s a crazy amount for food!
Thank you ❤
"I'm here too!" 😆😆😆😆
Daniel looks so much like Hope!
"Total is 19.87"....
Ha, i graduated high school that yr.😆 What a great yr!😁 Yall did great!💪💖
Gluten Free people make their own pudding. Milk, cornstarch, sugar, maybe cocoa or strawberries. Touch of salt. Use the same milk you were going to use in the box mix pudding. A bit of vanilla?? Pretty much free pudding.))
We have a Aldi store going up in our town hope they finish it soon , thank you , your Video’s are very helpful 😇🙏🏻🙏🏻🙏🏻
Great job!
Of course, IRL you could be a flexible, buy items that are over $1 but have a lower price per unit price and save a bit more.
vegetables are important for life without disease. just a thought.
I bake my own bread so it’s cheap AND nutritious. Artisan bread can be baked within four hours or overnight
Yassss. I love this video!!!!! Thank you!!!!
I know Tessie cans/preserves do you also I am new to your channel. I know times are harder when you have to be within a budget but sometimes dry beans that you can your self can be a big difference and for those of us that can grow a garden no matter how small. Also if you have the ability to make your own seasoning and or onion soup mix like I do even on my channel it shows that it can be a GREAT money saver and you can control the salt content! Great haul for 20 bucks I will have to see if this is something I can do. The hubs is a meat eater so I might have to bump this up some but ya ..... great video!
Daniel looks like you Hope alot! Let Daniel have the pudding. I came back from you and Daniel's 2024 challenge and Daniel got his pudding! 😂
Sauteed white beans tossed with pesto and pasta! And I mean homemade pesto, doesn't have to be basil and pine nuts. Could be spinach and sunflower seeds.
I’d suggest my Italian Grandmother’s traditional recipe of Ceci Pasta (ceci translates to garbanzo) it’s simple- sautée 4-6 garlic cloves (crushed if you like it garlicky, whole if you’d like to take them out) in the oil of your choice, add one large can of crushed tomato (not Italian seasoned, but added purée is fine). Boil the short pasta of your choice. Add two small cans of drained garbanzo beans (reserve the liquid). Cook the beans, tomato and garlic for 5-8 minutes until the garbanzos soften slightly. Add the drained pasta, and bean water until it coats the pasta the way you like (of course the pasta will absorb some of the liquid). Finish with some yummy olive oil, it should have a nice sheen to it. Season to taste. Serve with grated or shredded Parmesan.
This sounds absolutely divine! Thank you so much for sharing.
Pasta made with garbanzo beans is delicious!
