    I love those old school cooking shows from Jacques Pépin. How come there is nothing close to it nowadays and that I have to go on RUclips watching decades old videos ?

      Most of them are focused on the personality of the chef these days rather than the actual food unfortunately

    Notice in todays cooking shows and with the celebrity chefs, the chef is the center of the theme, not the cooking or the food..... Chef JP and his techniques, passion, love, are immortal.

      Exactly. Jacques shows us how to cook; is not "look at me" like celebrity "chefs".

    That salmon though. That sweetness is perfect with the salmon's flavor. So good.

    When you mix soy sauce with sugar, molasses, honey or any like sweetener, you're essentially making teriyaki sauce. Because that is what teriyaki sauce is: soy, sugar plus a little bit of mirin or sake wine.

      Actually soy sauce + sweetener is more like SE Asian sweetened soy sauce or Indonesian Kecap Manis

    I use couscous in place of rice. I find it's much quicker to cook and I prefer the texture

    "Maghreb" an arabic word meaning "The west" derived from even older Hebrew word "מערב" which sounds very similar, only the "GH" is a soft variation for the throat consonant ע. The Maghreb is simply the west-side of the muslim Khaliphate of the early Islamic conquest era.

    "Maghreb" in Arabic (and also in Hebrew for that matter" is simply "The west". so Western part of Africa. Now Original GravLax is done with plain Sugar-Salt mix and no other seasoning. Also - you would use huge amount of salt+sugar to draw out moisture and liquid off the fish. It concentrates it, and preserves it so it can be kept even without refrigeration. You need to keep it in the fridge 2-3 days and in such a way it can drip and lose all the water and get drier and drier. For a big Filet like the one shown here - I'd use about 1KG of half-sugar-half-salt mix.

      Not really, Maghreb actually refers to the sun setting, or the place where the sun sets, as it rises from the east and sets in the west of the Muslim Califate from medieval times.
