Cooking a Canadian Pancake

A No Added Sugar Canadian Pancake
1 Cup APF
2-3 medium size apples, grated (1 cup)
2 tbsps butter (optional), you may use other cooking oil
1 egg (optional)
1tbsp baking powder or use a ratio of 1 tsp baking soda: 1 tsp baking powder
1 - to 1.5 cup water or milk
.5 or 1/2 tsp sea salt
Butter or cooking oil to brush the pan with before pouring the pancake batter
*apples can be substituted with grated or mashed pears, grated or mashed apricots, mashed bananas, berries, grated or mashed carrots, mashed pumpkins, sweet potatoes, crushed pineapples or plain maple syrup.
Feel free to experiment with your desired fruits and vegetables. You may add more fruit for desired sweetness, or maple syrup.
*vegan milk or any milk
*egg can be substituted with 2 tbsp mayonnaise
*if vegan, just subtitute eggs, butter and milk with vegan ingredients.
How to make the pancake batter:
Mix all ingredients until there are no more lumps.
If your batter is too thick, add more liquid. If runny just add a little more flour.
Warm pan, low to medium setting only and brush or spray with butter or oil.
Pour the desired amount of batter.
Flip the pancake on the other side to cook. Cooking time is between 2-3 minutes per half cup of batter. 2 mins on one side, 1 minute the on the other side.
Top with Canadian Maple Syrup. Serve.

This recipe yields 6 regular size pancakes. Double the recipe if you desire more pancakes.
