Unrelated but I've got a 200# brisket and 50 rib rack smoke this weekend for a college graduation.. thanks to you and aforementioned Knox, Chud, Wilson, for the help. Smoker and wood show up Thursday gor a Friday/Saturday cook. Appreciate yall. Aint gonna be 3 michelins but I know its a grandslam with everyone's advice
