It's not a bad idea, but it just depends on your audience. It takes time to build a channel but you can give it a try. I think that Tiktok is possible better for book promotions. Best of luck!

I started posting daily to a new TikTok channel to promote my children’s activity books (coloring and scissor activity). My videos are only getting around 230 views during the first day and little views. I don’t seem to be getting any sales through these promotions. Does TikTok stop showing my videos after the first day?
People can look up any book on Amazon and copy it, that shouldn't stop you from promoting your books. It's different if you are making low content books because, in theory, those books are easier to copy, but you also need to promote them so it's one of those situations where you have to make a decision that's in your best interest.

I haven't tried this with Pinterest yet myself, but yes, you should be able to upload videos like this to Pinterest.

You can create a video on Canva for any purpose, not just for books.
Is it better to create the videos on canva than directly on Instagram or tiktok?
No, it's not better, it's just a different way to do it. I personally find it easier on Canva, but it is completely your choice.
