I made an N the first time, much easier than the A that I made last time!

You can order stencils online from Amazon but it’s way easier to just get a poster and trace numbers and cut it out that way you know how big or small you’d want it

Cutting the cake, the meringues were extremely soft, almost melting (not for the temperature, we are freezing in Scotland) but because of the moisture of the cream, and discolored on the cake. Did happened to you too? any suggestion? and about the suggestion: I did the tart as base and a sponge as second layer. The sponge kept together the cake while cutting (so no slice crumbling apart) and love the two different consistencies! just my 50cents thought :-)
1. About 4 millimeters. 2. I suggest to decorate just before serving. Or replace the meringues with other decorations. Thank you for the suggestion, sounds good 😊
P.S. I dip the base of my meringgues and sugar decorations in a bit of chocolate before adding it to any whipped topping ( it creates a mini barrier - similar to lining tartes with a bit of chocolate before adding cream )

I make and decorate cookies for a living and they're not easy to cut once they're baked.... these come out of the oven looking harder than my standard sugar cookies do
Lwaxana Teunissen i have made a few now and the trick is with the dough. If you use a standard cookie dough it is difficult to cut but if you use a good pate sable dough which is very short and buttery it can be cut if carefully into slices.
