We have power outages from time to time, but it is usually due to weather, and not a lack of generation. But then again it costs about $300 CAD per month for electricity. As for water, in the municipality that I live in, we pay $786/year for water services, and we sometimes have to boil our water due to damage to the underground pipes in the winter (when the ground freezes) and spring time (when it thaws) the ground moves and can cause ruptures. You are so correct to point out how lucky we are that these things are all that we must worry about in a world filled with greed, hatred, and fighting. Thank you again for sharing your videos, and especially this technique.

Our weather is lovely where I live, typically a sunny South Africa, it is winter time at the moment (6°C to 21⁰c) summer time is normally 21⁰C to 30⁰C with a few days in the upper 30's. Been without water for a bit more than 2 days again and electricity load shedding level 6 this winter, meaning we don't have electricity for 6 to 8 hours per day, but we are all fed, have a roof over our heads and sleeping warm at night. Tip for flies: (I used to work with Mala mogodu- afval in a butchery) wipe all surfaces with jic water and wash your floors and walls wit jic as well. Flies hate the smell of jic.

Well done! Rendering fat is a tedious job. The best method to get the most fat is mincing it before Rendering, But as you say, the dogs love the left overs, I just freeze it in smaller packages for my pup and add a little bit in her food as a treat. (I render between 20kg and 40kg Tallow per session) Lard is much easier to render, it melts at much lower temperatures and I feel the gain is a bit higher than with Tallow, but Lard is about 4x the price of Tallow here where I live.

Hi Karen. I've tried the different ways with and without salt and honestly can't really tell the difference in the purity of the fat. I've also asked on groups if anyone could give me a reason as to why some add it because from a "purifying" viewpoint it is counter productive in my mind to make a saturated solution and expect more impurities to disolve in the water, but thay is just my personal opinion and not necessarily facts 🤷 What it definitely can do is to act as a preservative in any amount of water that might slip in or stay behind in your fat. In the sense that it might prevent or slow down bacterial or mold growth at room temperature. I still prefer to keep my wet rendered fat in the freezer though. Dry rendered can last for a very long time at room temp but dry rendered fat tend to smell more Beefy.

I felt awkward as if they were doing me a huge favour. I started cleaning and chopping at 10am and finally finished everything at 4! I have just spokrn to Maurern who sells tallow and if my recipe using the tallow I made works well I will just order from her, so thank you for giving all of us her contact details.

Thank you Jessica. There is not a certain amount of time or even amount of water to add, more water makes it a bit easier because the meaty bits tend to sink to the bottom when the fat is cooked out of it. I do scoop the oil off the top and strain it through a piece of cloth as the fat melts. It is also a lot faster if the fat is minced. And if you do wet rendering it is advised to keep your Tallow refrigerated, if you accidently scoop a bit of water out with the oil and keep it at room temperature it will start to mold eventually.
I scoop the clean oil off the top as it melts down, no time limits. The melting time will differ a lot depending on the heat applied and how fine the fat was cut/minced before rendering.
I had to render with the wet method 4 times to get the smell to go away. 1cup of water for every 1lb of fat, salt and low setting on the Crock Pot, leave it for 12 hours, strain, refrigerate for 6 hours, separate the tallow from impurities, and repeat.
Tallow should not have a very strong smell to start with, did you maybe dry rendered it first? Usually the meaty smell only become pronounced if crackling starts to form in the hot oil. But even with wet rendering it will still smell of something, it's like olive oil that have a distinct fragrance to itself but it should not be overwhelming or stinky.
Some of my tallow renders pure white and almost oudourless while some has a yellow tint and slight fatty smell while using the same process. what might cause the difference?
It all depends on the kind of fat you are rendering and the animals diet. I found that the kidney fat gives the purest white Tallow and the softer "more expensive fat" tends to be yellowish. Free range grass fed beef fat also have a richer colour.

Hi Joanne. You can do a second rendering the smell might lessen a bit. The water in the bottom of the pot with Wet rendering stops the oil from overheating, dry rendering usually cause the sinew and blood to crisp up causing the meaty smell. If you just rendered it, it can be that it is still warm, cooled down it shouldn't have a strong smell at all.
With all our challenges I love South Africa, it is just our corrupt goverment that is an issue, but we have lovely people, predictable weather and breathtakingly nature reserves. So it's not all bad.
