Cocoa Sizing & Melting Test

  • S. Howes recently performed a test in our R&D facility to reduce the size of a block of solid cocoa liquor at ambient temperature, and then fully melt it for further processing. The block was successfully shredded in our #18 lumpbreaker and then was reduced to a more uniform particle size in our power grater. The smaller chunks were then fed into our thermal screw conveyor and melted using a low pressure steam jacket, about 30-50% product loading, a slow auger speed, and a heat transfer coefficient of about 10.
