Pig & Beef Probably a kettle. Been trying to order a Rectec bull’s-eye, they sell out so fast. My second option would probably be a kettle grill with some way to do direct and indirect. I like the slow and sear , But the price seems high.
Thanks for publishing this - I've been trying to decide if it's worth getting a S&S. Do you think the water reservoir makes a big enough difference vs the cheap charcoal baskets that come with the Weber Master Touch now?
Great question. I do think it does a better job of creating two distinct zones. $100 is a little steep when you can still accomplish that mostly with the charcoal baskets, but I think the ease of use makes it worthwhile for me. That and I’ve gotten a longer burn from my charcoal in the SnS than the Weber baskets.
The weber char baskets don't really follow the contour of the grill body. Plus they let heat escape to all the sides, so it's not really good for indirect cooking.

A person really can do the same without the sns just using the weber char baskets, plus keep the cost down.
I agree on higher temp shorter cooks but the SNS works way better on low & slow rib cooks with perfect temp control the entire time for me.
